do you know if the vehicle keeps an internal log of when or how often the oil change service interval light was reset? and an what mileage it was reset? do mechanics typically reset this for you when the oil is changed?

Yes the vehicle tracks it and yes the mechanic should reset it when the oil was changed, although its not that uncommon for them to forget
