How to make easy homemade Sauerkraut

  • RECIPE
    1 cabbage weighed
    2% salt
    *Cut cabbage in shreds
    *Add the salt
    *Scrunch the cabbage till brine forms
    *Put cabbage in a sterilsed fermentation crock. Press it down so that there is at least 1cm of bring over the weight.
    *Pour olive oil into airlock groove
    *Close lid and keep in cool place in kitchen
    *Let it ferment for 4-6 weeks
    *Enjoy!

    How long do you let it ferment? Thanks. I didn’t know about the crunching part but it makes sense.

      Minimum 3 weeks, i prefer closer to 6 weeks depending on the season I make it. At 2 weeks it will smell rotten, don't worry, that is the Sulphur in the cabbage 'escaping' from your jar.
