    I bought a whole bunch of Le Parfait jars early this spring, when the canning lid / jar shortage was at its peak. In today's video, we're going to try them out and see how well they work pressure canning.     Hello.
    I'm French and I've been following you for a while on CZcams.
    In France we only use "le parfait" jars with rubber or with capsules.
    This works very well for water sterilization.
    I bought a pressure canner presto from you in the US and the "le parfait" works very well too.
    You should put the rubber before filling the jars, it's easier

    We bought a farm and we brought all our mason jars about 30. Then the previous owner left me over 200 jars 🥰🥰🥰 all different kinds as well

      I was checking through your videos, I had a question? Do you have any videos on canning rhubarb? Is there another way to store rhubarb, other than canning, maybe freezing? I don’t know it’s just such a short season with rhubarb and I love it. Thank you, the new lids

      Sooooo lucky! We are driving around all over buying glass jars, but most people only have 5-10. A sweet old lady asked my husband «what are you going to do with them?!» and her eyes lit up when we explained we are going to live the old fashioned way, growing and storing our own food 🥰

    I found out the hard way that putting the gaskets on the jars BEFORE filling is the way to go. I like the le parfait jars, love my weck jars. The weck jars I tend to use more for canning while the le parfait jars are used for dry goods, or things like tomatoes or peppers in oil. Things you might want to access more than once but keep airtight are perfect candidates for le parfait jars. I've canned sardines, anchovies, and herring in oil or sauce in le parfait jars. Perfection!

    I have pressurcanning with Ikeas jars, just like this with rubbergasket since 10 years. It works like a charm

    I have been canning in these jars for years. You just have to get used to putting on the gaskets it isn’t so bad (I usually put my gaskets on before filling and close the bail as soon as the jar is filled. Couple of things to keep in mind: never remove the bail from the jar or lid, you can warp the bail and caused your seals to fail; and think of your jar as a set, you cannot repurpose the lids jars or bails to replace broken parts of other jar sets. I reuse my gaskets , I just check them really carefully for damage before canning. These are durable jars, if taken care of properly they will last a life time.

      Yes, of course you can remove the bail without damaging anything. It's just inconvenient, that's why these bail jars a not realy used for canning. Weck jars (or in the past other brands with the same typ of glases) are the better option.
      Especialy the IKEA bail glases are not the highest quality since the bail part is in general quite warped.

    I've never seen anyone can in those jars.. That's amazing considering how many channels do canning videos.. I have a few of these jars and a few weck.. I haven't canned anything yet but I'm about to start my journey soon .. This is premium YT content!

    When my mom canned with those she had me hold the jar because one time she knocked a jar of pickled beets all over the kitchen trying to put that rubber seal on the jar! But they sure were pretty on her pantry shelf!

    Great tutorial for anyone that’s considering these jar! I have some of these and Weck and while they are pretty on the pantry shelf and quite impressive to bring them out for company , truthfully I prefer canning with wide mouth regular canning jars! Another great video Rachel! 👏👏👏

    I just canned re-using my canning lids. I carefully opened my lid using a knife along the point of the can opener so as to not dent the lid. I then washed my canning lid.. and reused them. It worked!

      I try not to tell too many people that I've reused jar lids. But it saved my bacon last year when there was a shortage

      Reusing lids is more common than you know. I mark my lids that I've use with a dot with marker so I know I've used once already. Any lid not possible to reuse gets small x, those I use for storing dry foods.

      Canning in countries other than the US, many reuse any jar and lid. It comes down to having food preserved or not.

      @@ljtminihomestead5839 it is definitely more common that one would think but those loud canners who yell about FDA regulations are louder than us. You learn realy quickly not to tell the wrong person you reuse lid though

    I always disconnect the lids and put the rubber on them when the lay flat on counter. Then I hock them back when the jars are ready to be closed. It's much less hustle that way. 😉

    This season I’ve switched about half my canning over to harvest guard lids (tattler aren’t available in Canada, but these are the same)… I’m really liking them but found there is a bit of a learning curve. The reusable aspect makes me really happy… I was one of those “rebels” who reused my flats anyway… but this is much better and more reliable.

    I always put the gasket on the lid THEN put the metal parts on so I don't spill the stuff in the jar and use your thumbs to push the gasket around the lip that helps too

    Oh my goodness, thank you, thank you for this video! I got a case of these from my gma (who passed away in February) and everyone told me I couldn’t can in these on a caning site I’m on. I knew you had to be able to since my gma bought the whole family blackberry jam every year in these jars! I’m so excited to can apple butter tomorrow in them. Happy canning!!

    I grew up seeing the procedure of canning so it's not a foreign concept to me & more recently I was among folk where even the guys were involved.
    Took my aunt to local hairdresser who went down into the valley & made use of the community kitchen set up for canning at no charge! Bring own produce & get to work!

    I live in France so here are some jar information..... you can put the rubber rings on before filling..place bottom of ring on lid then hold with both thumbs and work up lid pressing your nails around edge of groove and ring..that way it fits better on lid...next ..you can leave the lever closed on jar after processing in fact it is better because the seal is rubber, where as on jars with metal lids not advisable. Next..the rubber rings can be used several times just look everytime of using.. rubber not perished.. still tight on lid not slack..keep in plastic bag when not using.... the French don't pressure can, they do a very long water bath can be as long as 4 hours this is pates and other meats,which is consumed in a year or so. All healthy.. I got my pressure canner from the US and I am going to try potatoes...So hope it helps you on the jars... they really are worth the money for canning..Thanks for the video..

      It's curious to me that Europeans water bath can things like meat. My understanding as an American is that botulism isn't killed by boiling temperatures for practically any amount of time. I wonder if botulism (Clostridium botulinum sp?) just isn't present in the soil, etc. in Europe like it is in the US.

    It is good to use food grade oil instead of petroleum, it tends to degrade the rubber more quickly. Probly don't want that in your food👍🏻🤗

    I'm not canning yet. Just trying to stay cool in our hazardous heat wave. Here in western Washington it reached 108 degrees yesterday and 110 degrees today. Aaaaahhhhhh 😰😰😖😖😖 It's never ever been this hot, especially in June.

    As im in uk and we use a lot of the leparfait jars. My favourite is the weck jars. They are similar but with clips to hold them.down and you can use the gasket for a long time..Next time try weck jars

    Thank you for doing this with Le Parfeit jars. Being I live in Europe I use Weck and 3 different types of these Le Parfeit jars. I have some Ball jars and lids but they are my lesser choice. Put your gaskets on before filling them to make it easier. Also, if you get a chance, buy a Weck funnel, they work much better with these Le Parfeit jars. Thank you again and enjoy!

    I just got a camp chef outdoor stove for my birthday! I am so happy! Thank you for showing it in your videos and the information that a high BTU rating is needed for pressure canning.. I no longer need to sweat it out in the kitchen and heat the house up... It was horrible last year!

    This is the kind of jar that’s more common in the uk, I’ve always used them for dry storage but I’ll start canning with them now I know they seal ok.

    How neat is that! Now can you re-use these seals from the Le Parfait Jars? Those greens look amazing Rachel, one of my favorite dishes and yes....very greasy. I boil my ham hocks a few minutes before adding them to my pot. Love this, so glad these worked out well. Another way to can and super cute jars.

    Great work Rachel! You can always tell by the tongue. If it’s turned down it is sealed. I have tons of them but I only store items in them. I was never brave enough to can in them but I may try next time. My mother use to water bath in them when I was young. Enjoy your day

    Firstly : OMG i nearly leapt out of my chair when you tried to open that last jar!!! My poor heart leapt into my mouth lol
    Secondly : I know you say the greens are tasty but that is visually really unattractive to me (we dont 'do' greens in NZ). However, I think I must at least give it a go. Might be okaywith gravy over it so i cant see it !! ;)
    Thirdly : It already looks mushy, after another 75 minutes of pressure canning, is there any 'substance' left to it? Or does it just fall apart as though it has been mashed?
    Fourthly : thankyou for your videos, they always make me smile at least once during them and often alot more than that :) xxx

      My grandma made similar greens and i remember them not beeing mushy at all. Yes it looks not very good, smells even worse if you dont like the smell of boiling cabbage. But it tastes amazing (depending on the seasoning you use and like)

      Ham hock is the answer to the taste. If you like pork that is what makes these delicious.

      The greens that she used are tougher greens so they generally hold up well from cooking and the canning process. So, typically they are not mushy.

      Your comments had me cracking up. The compliment to Rachel was so nice. The description of how you see greens and your amazement that greens are delectable is hilarious 😂. Do you eat kale? What about Swiss chard? I absolutely love greens, they are so tasty. My elders referred to the liquid/broth as pot-liquor (never broth), so your take on them made me 😂.

    If you like these European jars think about Weck Jars. They are easier to handle than these.
    For storing dry goods I like these with just one bracket better than Weck jars which have two brackets.
    Both types of European jars have thicker glas so they last longer than Mason Jars. That's also to consider when thinking about future investments.
    My Weck jars are at least 60 years old. I only by the rubber band new on a regular basis.

      What do you do if you open the jar but don't use all the contents right away and want to store the rest in the fridge temporarily? You don't put those clips back on, do you?

    If your going to freeze broth in canning jars, be sure to use wide mouth. They are less likely to crack when the broth expands into the "shoulder" of the jar.

    You need to take the lid off , put the band on ... pinch te irons together and attach your lid to your jar .

    Cool that you used this type of jar! I have thought about it, but never bought any for canning, just for dry storage. (The clamp type jars are the only thing that will keep out pantry moths.)
    I have some antique jars that I use for canning. I have wondered about them sometimes having a little rougher glass on the rim. I read somewhere that was because the rubber gasket sealed under the zinc lid on the bottom of the threads, not on the rim. I thought that was interesting.
    It’s pronounced more like luh parfay, not lay parfay.

    You need to use a wood or plastic spoon to use for packing in jars, to avoid chipping or scratching.

    How many times can you reuse the gasket? I think they might be a better than harvest guard

      Yes, they are much thicker.

      as far as i know you can use them as long as they dont get damaged (cuts in the rubber) and dont get to large. Some of the rubber gaskets get looser over time and at some point just dont work very well anymore. I think it is even recommended from the producers of such jars to use only gaskets that fit very tightly around the lid.
      They might get discolorations from foods with strong coloring powers. It wont damage them, just wash well and maybe boil in vinegar water.
      After not using them for canning you can still use them for storing dry goods (not canned), use as rubber bands or give to the kids to make slingshots with.

    I LOVE both Le Parfait and Weck jars canned goods look so much prettier in them I have better and long success with them than Ball and Kerr so glad you made this video now I know I can pressure can with them

      I've actually had the opposite experience: I've had significantly more jar failures with Le Parfait jars than with standard American style canning jars, but I like the Le Parfait jars for a lot of other reasons, especially not having anything in contact with my food other than glass and the gasket.

    It seems like Europeans normally only do water bath canning, and I heard one or two Americans that tried Weck jars say that there were issues with the seals getting pressed out of place by the steam escaping when pressure canning. Have you noticed any movement of your seals/gaskets on your Le Parfait jars after canning? It seems like maybe the Le Parfait jars may not be as susceptible that issue as the Weck jars.

    With metric slightly larger then US standard for volume, you do process your Liter and 1/2 Liter at the same times as Quart and Pint jars?

    Thanks for your video! I have never canned but have kilner jars, will give it a go! I guess I can water bath in a pot of hot water for a couple hours to seal (no pressure canner). Quick question: how easy is it to open the jars once sealed I.e. do you use a knife underneath or any tips on how to open? It might be easy or there might be a knack…?
