- Heghineh Cooking Show - How to make Homemade Lahmajun Meat Pie Recipe heghineh.com/homemade-lahmajun
Lahmajun: an Arabic dish made of bread and spiced minced meat ,with tomato sauce and parsley . Very flavorful and delicious , yet so easy to make. This dish is often called as Middle Eastern or Armenian pizza .I still think the word pizza is not what really describes this specific dish.Traditional Lahmajun (Meat Pie Recipe) is made with ground lamb,I've tried making it with other ground meats such as: beef, turkey, chicken. By far half & half beef with lamb worked the best. When choosing meat for Lahmajun ,make sure to use something with at least 25-30% fat, that way you'll have really juicy and tasty Lahmajun .And feel free to use your preferred spices to season the meat.As for the bread part of it,it's really simple : water, salt ,flour .Of course you can also make it with regular bread dough.Just as pizza, Lahmajun( Meat Pie) Recipe can be made different sizes: mini, medium or large, just make it at your presence .You can bake it in the oven or in a non stick pan with tide cover.
Enjoy the recipe and happy baking!!!

I’m an Indian who have spent 8 beautiful years in Yerevan. I’m in India now. I studied there in the state medical university. There is not a single day without thinking about Armenia and the foods I had there. My favorite lahmahjo is the one named ‘Nreni’ in Zeytun. Thanks Heghineh jan for sharing this recipe. Please share the recipe for the khachapuri (with potatoes not the adjarian khachapuri) we get in the streets!
I love your recipes. My boyfriend is Armenian and I’m Mexican so it’s tough for me to try and find great recipes that are simple.. I’ve cooked a few of your recipes and he really enjoyed them! Thank you so much!! ❤️🙏🏼
I always see Italian or Asian cooking videos, it's so great to see Armenian foods or any foods from the middle East. I can't wait to try all of these amazing foods! I wish you and your beautiful family all the good will I can.!
Drake Garrison I agree I’m sick of it. I don’t even watch much of the cooking channel anymore because it’s ALL the SAME! Italian, Italian, French, Italian again! My husband is Lebanese and I have many Armenian friends and I will NEVER choose a bowl of pasta over some good Mediterranean food.
I tried this recipe last week and it turned out fantastic! Husband is already asking for it again. Thanks so much for the recipe!
Your energy is so positive and the way you explain stuff makes me wanna get up and cook! I mean I am obsessed with you
Loved this! Thank you! You make it look so easy.
Я вас и вашу семью очень обожаю когда вас смотрю душа живёт и радуется.
Thank you for your very informative and peaceful cooking video. God bless.
Thank you Heghineh jan ,looks absolutely delicious
We make this all the time in the Levant (Lebanon, Syria, Palestine/Israel). We call it Lahme bi Ajeen. We have so many Middle Eastern Armenians and they're all family.
Thank u !!
Been craving these !
Can’t wait to make it

BRAVO HEGHINEH ,YOU DOING GREAT JOB.
Thank you Heghine jan for the recipe! It tastes exactly like the one I used to buy when I was a student...
Thank you !! Saved this recipe .. will make it for my Armenian man ❤
Thanks a lot for sharing ...
Only just discovered your channel! Wow, great food! The lahmajun we first experienced in Cyprus, where there was a Middle Eastern bakery. I have loved it ever since, and as your is so simple, I will definitely try this (but with lamb).
Looks amazing.

My pleasure , enjoy!
Great video. Love your very natural style . I hope you make "bagargh" some day. It's similar to Katah. My grandmother made it but sadly I do not know how. It had a riv, buttery filling between layers. We ate it fir breakfast . Yum my.
Your show &Kitchen reminds me of Glendale ,CA

I usually use dry Mint and Oregano.
U do good job
wowe nice
My friend makes hers using store bought flour tortilla wraps …
My grandparents are from Armenia they escaped during the early 1900s… and growing up we literally NEVER ATE this !
I never even heard of it till I met my Syrian Armenian friend !
I never even saw it at the Union City , NJ Armenian Church Festivals.
But I see it now in the old cookbooks I have from the Festivals.
Loved the video. I am going to try this recipe for my lahmagoun.
Very nice, I subscribed, Im glad you id not use yeast and as a chef I add some olive oil to my flour to make the pastry crisp. Thanks, chef Andros.
Thank you chef,
Will keep that in mind:)
I'm definitely going to disguise my veggies in sauce so kids will just eat it. Looks so Good and looks fun to make. I LOVE this kitchen more than your white one. The white one looks too high maintenance for me.
Looks delicious! I've been drawn to Armenian music lately and after watching this video, I am also drawn to the food now! Subscribed! Looking forward to more of your videos!
Thank you so much, sorry didn't see your comment earlier
Hope you enjoy watching !

I am from Armenia and my grandma showed me your channel and I love it
As an ex Montréal person my mouth is watering because I have not come across Armenian food here!
I need to try your version. Looks very good.
Thank you
+heghineh I meant to ask about the red pepper paste you use in many dishes you make. What kind is it , how spicy and where do you get it?
+maylien
Pepper paste you can find in any and all Armenian markets.
It says just that "pepper paste" on it. They come in mild, medium and hot.
Very tasty just by itself too, just add little olive oil, fresh cilantro (finely chopped), garlic if you like, and some tomato paste.
+Narine Petrosyan Oh thank you very much! We don't have any Armenian stores around here. Maybe down in the SF Bay Area (hour drive from me) so maybe I'll check that out. Do you have a brand name I should look out for?
+maylien haven't seen your question, sorry
Any Mediterranean store has it , if you can't find it, leave it out and just use red chili flakes ,tomato paste and sauce , it'll still taste great:)
Excellent recipe! Should the skillet be set at a medium heat or high heat? Thank you!
Thank you!
Medium to high, you can always adjust it after first one
what about the meat? Is it still raw, espcially when you cook in the skillet. I assumed you cooked it then mixed it with the other ingredients.
Abris, Thanks :-)
I think I had this years ago and a spice blend was sprinkled on top that had sesame seeds in it. Do you know of that spice blend? I really like your cooking style and want to try this soon. Thank you for sharing
That's another kind of bread/appetizer , this lahmaju doesn't have sesame seeds:)
Thank you too for watching!
Susan Ruzicka you're referring to zaatar or zataar which is a spice/herb blend and typically made into manaeish
thanks for cocking Arabian food
Does the fat content in the meat make a difference? Does it need to be very lean meat if so how much? How do you keep the meat/topping from shrinking?
Can you use wheat tortias for the dough?
ojjjjjjjjj my good i can actually tell how your kitchen smells
Thank you for watching , hope you enjoy that lahmaju :)
Now I must do this for tomorrow's dinner! It looks so tasty! Thank you for showing us! It look easy by the way!
Where do I find the measurements
Did the dough ?
Thank u

This is truly the best recipe for Lahmejun out there... Heghineh does it right, only difference is that I prefer more Tomato Paste (I usually use one to two 5 Ounce Cans) and I bake them at 500* in the Oven. Your Recipes are Amazing, I find very few who keep things really authentic the way they should be. For the Record, anyone who uses Tomato Paste in their recipes, ALWAYS use Mutti Double Concentrate Tomato Paste, the Italian Brand of Tomato Paste Concentrate. Trust me you'll never buy the other brands ever again.
I love your recipes. doesn't the meat stay raw since you only cook it for about 3 minutes?
I had the exact same question regarding the ones made in the pan.
Ivette Montalvo ...hi.... I think it's spread so thin as a paste that it steam cooks it enough. IDK for sure but you could do the pan thing 1st and then a quick finish in toaster oven or super fast under broiler.... WATCH IT LIKE A HAWK THO😓
Could you please tell if it is red bell pepper paste or hot red pepper paste? What’s the brand please?
Cutiepaws You can often buy this at middle eastern stores. The brand I often purchase is by Sadaf.
Oh thank you so much
My pleasure , enjoy!
Dear Heghineh, your recipe link is not working :(
Can I make this with pita bread or tortia if I don't have time to make the dough ?
Yes, you can use both, if using pita bread try to use only single layer of it, or else it'll be too thick and hard to bite :)
+heghineh thank you ❤️
👍👍💪👋
По моему сейчас у вас белая мебель на кухне, хотя в точности такая же)))
I live in US too. What do you think, can I use tortilla (mexican bread) instead of the dough and use the grill pan (with grill marks). And then use some iceberg lettuce and fresh tomatoes and some tsatsiki sauce and wrap it up in the cone or a "baby blanket". Is that sounds good for you?
No , it sounds like something different, not lahmaju :)
George Blatant You just went all Greek and Mexican, nothing Armenian. lol
CDRNY I know, huh? ))) Isn't what America is all about? Pile everything and make something for everyone )))) And we call it GYROTACO
George Blatant If that's what you believe then I'm not sure why you're on here if you don't care about the recipes from other countries. Stick with your "gyrotaco" and we'll stick with our authentic and traditional Mediterranean food. Thanks.

What brand of red pepper paste do you use? I am having a hard time finding one that I like as my parents used to make their own so the canned ones don't taste the same. Thanks
I don't have the brand name, all brand taste the same to be honest. I'm not buying it anymore, I make my own, here's the link for CZcams tutorial of my red pepper paste:

Inchek asum? Duk ek hay ou asumek vor arabneri pie a? Ba vor duk ch’asek vor haykakana ov k asi?
the meat is raw..isn't it?
Av63PNT0 she’s putting the cover on it so I would think the steam from the pan is cooking the meat through. The meat is spread so thinly so it should cook quickly..
LOVE ARMENIAN PIZZA!!
B.O. S. yes there is! its all over here in L.A.
🇱🇧 the word is ARABIC and u call it Armenian? Lahme or Lahm means meat...is burrito chinese food??? NO.
So Arabic word, Arabic food. Keep Khash
I did not put my vegetables in the blender and I regret it :P Next time :)
Yes, it's better to do that :)
Why are you so beautiful?
Lahm bi ajeen....not LAMAYJOON "Armenian Pizza" as everyone claims...even the first word Lahm "meat" ARABIC! 🇱🇧 Respect it for what it is
I Love Armenians and Armenia but keep things correct...

Lahmajun is NOT a Arabic dish please stop misleading the public.....
I think u can say its middle eastern... different seasonings and styles but in the end all delicious.
Did you know that lahmbajen is the arabic word for "Meat wih dough"? I wonder what it means in your language. Misleading the public they say.
LAHM BIAJEEN or LAHME BIAJEEN --- ARABIC WORDS HOW THE @#$+! IS IT ARMENIAN???? DO U CALL BURRITO CHINESE FOOD??? NO BECAUSE BURRITO WORD IS A SPANISH WORD! 🇱🇧🇱🇧🇱🇧🇱🇧🇱🇧🇱🇧🇱🇧
