CRAWFISH PIE 1 Stick of Salted Butter 1/2 Cup of Flour 2 Onions 2 Sticks of Celery 1 Bell Pepper 4 Cloves of Garlic Small amount of Olive Oil 1 (10 oz) Can of Drained Mild Rotel 1 Cup of Chicken Broth 1 Tablespoon of Cajun/Creole Seasoning 1 Tablespoon of Parsley Flakes 1 Teaspoon of Pepper 1 Teaspoon of Worcestershire Sauce 1/2 Pint of Heavy Cream 2 lbs of Crawfish Tails 1/4 Cup of Milk Paprika (optional) 2 (9 inch) Raw Deep Dish Pie Crusts *(Or 12 miniature tart pie crusts)* Start out by heating a large pot and pan over med/low heat on the stove. Also, take your pie crust out of the freezer and let them defrost. Chop your onions, celery, bell pepper, and garlic. Preheat your oven to 375° Melt the stick of butter in the large pot, then add the 1/2 Cup of flour. Stir consistently. You want to get your roux to a peanut butter color. So if you get their quickly, just turn your heat off until you're ready to add your vegetable mixture. In the large pan, add your small amount of olive oil, and drop your vegetables in. Sauté for 20 minutes. You want to be consistent in going back and forth between your roux and vegetables. Once you've sautéed your vegetables for 20 minutes, add the drained can of rotel, and cook for another 5 minutes. After the 5 minutes is up, add the cup of chicken broth, and let simmer until you've got your roux to a peanut butter color. Once you've reached the desired color, slowly add in your vegetable mixture. Mix well. Next add the half pint of Heavy Cream. Mix until you see a creamy texture. Add the cajun seasoning, parsley flakes, pepper, worcestershire, crawfish and mix well. Once blended, turn your heat off, and add the 1/4 cup of milk. Mix well. Now you can start filling the pie crust. Fill each pie one spoonful at a time so they get equal amounts. Top them off with a sprinkle of paprika, place on a baking sheet lined with foil, and move to the oven; baking for 1 hour or until you see golden edges. Let cool for 15 minutes and enjoy! 😊
Surely too late now, but use a 8-9" Pyrex pie dish or similar sized Corningware piece and spoon it on in there! It's mostly all cooked so just let it brown. You could makeshift a pie shell by squishing a few slices of crustless white bread together across your pie pan, dampen after flat. Heat to kinda brown & stiffen it. Then fill! Also, refrigerated biscuits flattened out very flat, because they'll rise a lot if not thin.

Smoked paprika has AMAZING flavor! It can be smoky and sweet. One of my favorite spices. Your recipe is great by the way and I will be trying it. Give my paprika some love. Get a good quality Hungarian or Spanish paprika.

I have made crawfish pie before, and it is AWESOME!!! I figure it costs me about 40. Dollars to make one, and about 3 evenings of shucking, but it is well worth it. This recipe looks awesome, and the next time my grocery store gets crawfish in I can't wait to try it. I expect I will be leaving a very positive comment when that happens. Man let me tell ya.. i made 16 mini crawfish pies from your recipe.. they are the Bomb.. ran out of pie shells. Still had some mixture. So i took your Dough recipe from your Meat Pie recipe. Needed my dough. So i took the leftover crawfish mixture and made crawfish hand pies. Let them sit in the refrigerator over night. Then deep fried them for 1-1/2 to 2mins.. The calibration of stoves may vary, so I would suggest going at a higher temperature next time. You could even use less milk.
