    Another idea for the coconut cream pie would be to use the egg whites that are left over from the custard and make a meringue for the top. My grandpa used to love the coconut cream pie from Marie Callender's and would always special order one with meringue on top instead of the whipped cream and it was delicious

    Helpful tip from a baker. Crumb coat your cakes for a smoother finish. Instead of putting all your frosting on at one time, stack your layers like normal and do a thin coat around the entire cake of frosting, so thin there will be parts you can see the cake through the frosting layer, the refrigerate for like 10-15 minutes. This will also help 'set' your cake so it doesnt jiggle or move so much. This helps hold all your crumbs in place and makes your final frosting layer easier to manage so you don't have globs falling off like you ran into a few times and makes the process less overwhelming once you're use to it. Love the rustic looks too though.

    I would have used a toothpick and put a cherry in the middle of each pineapple to look like a poppy. The toothpick would help hold the flowers.

    Becky, you have become like a best friend to me I want to thank you for that. I have overcome stage 4 colon cancer that had spread to my liver, I have undergone 3 major surgeries and 6 months of chemo....The anxiety of it all is so overwhelming but whenever I feel like I need an uplift or a smile on my face I turn on your videos and I feel like I have a friend in you to keep me company and get me through my day. I've made many of your recipes but my favorite of all time is the garlic pucks!! I have not peeled a clove of garlic in months haha I literally use them all the time .......

      @@phylliscurtner5578 thank you so much for your kind words. Yes it was a rough road especially after my diagnosis. My mom was diagnosed two months later with pancreatic cancer. We fought and fought together, but she did not make it to the finish line with me. I will celebrate two yearscancer free on June 24. I lost her a year and a half ago on September 23 but I thank you for your prayers. Every little prayer counts. I am 56 years old and have two beautiful little granddaughters that I would like to stick around for! God bless you.

    I loved making humming bird cake with my great great grandmother. We would add carrots to ours and white raisins, which makes me miss her. She passed at 110, and when we made this cake, she was like 96 years young, and would say that's what keeps her young is humming bird cake!! She had 10 kids, 60 grandchildren, and 100 great grandchildren when she passed now. Some of the numbers have gone up ( I believe that's what kept her young)

    Hey! My mom made pies at Burton's Cafe in Whittington Il for years. A trick for pie crust shells is to put crust on upside down pie pan. Bake, cool, then place in a clean pan.😊

    Oh my goodness! My aunt made a hummingbird cake once probably 20 years ago, and when I asked her to make it for my birthday next year neither of us could remember what it was called and she couldn't figure out where she got the recipe from, so we forgot about it and never had it again! I just called her to let her know I found it and she was so excited. We are making one this weekend! 🤩

      The actual recipe is from southern living magazine, it’s available online everywhere, and it differs in several key aspects from what you see here. For one thing, you don't purée the bananas, you chop them. They should not be overripe or soft because this is a fruitcake and you want the pieces of fruit to retain some presence. That’s not the only difference, but it is, as she says, a banana cake with pineapple, and not a hummingbird cake.
      I’d also suggest to any baker to measure how much their cake pans hold and keep that info handy. There is no way this cake would ever fit in two cake pans. I often use two 13x9s for one batch.

    Hi Becky!! You can bake your bananas in the oven at 300 degrees for about 20 minutes and that will ripen the bananas and bring out all that yummy sweetness!

      Another tip. When you put your springform pan together, turn the bottom over so that the ridge faces down. It seals fine and makes the bottom of the pan flat. I find it easier to slide the cake off the flat bottom. Thanks as always for your hard work

      Another banana tip. If one or two bananas get over ripe,peel them,put them in a ziplock bag,smoosh them flat,seal the bag,mark the ingredients/date and freeze. Then when you want a banana nut bread,or banana cake…. You have the bananas ready to thaw.

    Hi Becky. I live in the deep south and have had several variations of hummingbird cake. Some have coconut and some do not. To form your pineapple flowers, when you take them out of the dehydrator push them down into muffin tins to form the flower cup. You can weigh them down with baking beads if necessary. Also I buy overripe bananas when they go on sale and peel them and freeze in zip lock bags. When I need banana for bread or cake I just thaw he necessary amount.

      I meant to tell you I had some onions that were trying to go to seed. I only had one that wasn’t. So I pulled them all out. I cleaned them all up & puréed them and I put them in ice cube trays instead of pucks, anyway, I even use a little bit of the green part so they’re like a greenish yellow color because the onions were a yellow onion. But I’ve done the garlic but not in pucks so I made patties. Keep on teaching this old lady lots of stuff. Thank you! You’re the best!

    An old tip from America's Test Kitchen is to bake your bananas, in the peel, in the oven for 20 to 30 minutes to prepare them for baking cakes and breads. It works very well and greatly improves the flavor.

    A tip I learned in a cake decorating class is to keep you spreading tool in a glass of water. It makes it easier to spread the frosting. You just lift out the utensil and shake it off a bit before frosting.❤

    To make cake frosting smoother, get a glass or jar tall enough for your metal spatula and add very hot tap water. Allow your spatula to sit in that water until the spatula is hot. You can just tap off the water or wipe it with a paper towel each time. Works best with a metal spatula or a butterknife.

    Try taking the pie crust out of your fridge 30 minutes before you roll it out. The reason your pie crust is splitting, cracking on edges, could be it is too cold. 😊❤

    In future, use the tines of a fork to release the batter stuck on your whisk metal tines. Start at the top and move the fork down as far as you can go. The rest could be helped off with a butter knife. 😊❤

      Use the cloth rings that you wet and put around your cake pans. They don't overcook or get too brown

    Hi Becky, may I make a suggestion? It's best if you do a crumb coating first on your cakes and put them in your refrigerator before you add your second coat of frosting so you would get a more even coating of frosting per slice of cake ratio and you will also have a more professional finish look.     Oh my goodness. Yummy spring time treats. Beautiful, just like you! Hint for success: use a metal 1/2 cup measure that you sprayed the bottom with non-stick spray to press the lemon cake base into your spring form pan. Easy peasy!

    Just a tip - keeping your vanilla cap off it in your drawer isn't the best idea - because of the high alcohol content, it can evaporate pretty fast. Also, if you had just made the 2 layers of cake, you could have used the excess batter to make muffins/cupcakes. They would freeze really well.

    My absolute favourite dessert is my Mother’s coconut cream pie. I have such fond memories of her cooking the pudding on the stove in a double boiler😊. She topped it with meringue and then baked it for a short time in the oven. We also ate it slightly warm🥰. Beautiful baking today…Bravo❤️

    I, too, have just been diagnosed with lung cancer... I just had my lobectomy and will be starting chemo once I have fully recovered from the surgery... I also enjoy watching you... You have some great recipes... I now make garlic pucks... I also chop my celery and onions... It sure comes in handy...... Can I shred and freeze beets, and I would like to freeze potatoes without them becoming watery? .. Thank you for all those you aid... Julie

    Tip… plastic straws are great in place of the skewers if you’re worried about the splintered bamboo bits. Bonus… you can suck the cake out of them when you take them out 😂

    I find with a 2+ layer cake to put in rebars (skewers trimmed down) to put thru all the layers so the cake doesn’t lean, I also use a piping bag to do the sides. It gives the decorator more control over frosting placement. Nicely done with the decoration.

    instead of adding sticks in the cake you can also put it in the fridge or freezer for a bit and the frosting will harden and act like a glue it always worked for me

    I've made hummingbird cake before, it was a bugger. I have found, especially with cream cheese frosting, if you keep a tall glass of hot water to dip your offset spatula in, it helps alot to spread it.

    Another choice for the extra layer of the hummingbird cake is to make cupcakes with the extra batter. You could save these for a snack or a gift for someone speciia.l

    Hi Becky...use your dough cutter to evenly cover the side of your cake...it works beautifully. You just turn your dish while holding the cutter against the cake..❤

      "dough cutter" aka bench scraper. I've seen the professionals do that and it looks so easy, but I know I would make a mess of it!

    It took me awhile to get to watch this video. Being low carb I can't enjoy these types of things but I do like to bake for my family on occasion. I really wanted to see you cut into the hummingbird cake and coconut cream pie. I have never made a coconut cream pie before. Watching this makes me want to try.

    Hi Becky! To make your cakes a bit more stable, you can try just trimming off a bit of the top where it domes and then it will lay flat😄

    Helpful hints: an offset spatula dipped in water will give a smooth consistency in spreading your frosting. also baking your cakes in advance and freezing them before frosting also helps for a nice frosting consistency. I do understand you were going for more of a rustic look, but thought you would like these hints for another time. all given in the spirit of love

    Omgoodness...that pineapple cake looks exquisite!! And you just know how good that lemon cake is! Of course, my favorite pie is coconut cream. 🥥 for the win. You can't go wrong with any of these.     Suggestion: freeze your lemon juice in little "pucks" by using a small ice cube tray. You could even freeze them into measured sizes. Enjoyed the video! P.S. hope you are sending your helpful neighbors cake pan back with a little taste of one of those delicious looking treats.😊

    When you have gaps between your layers, it's much easier to fill them in with some of the frosting in a piping bag or a gallon zip lock with an end cut off. Just squeeze/smush it into the gaps. Beautiful cake!

    @Acre Homestead Hey Becky! FYI- you want to keep your vanilla extract lid on when not in use as the alcohol evaporates when left to the open. This can cause your extract to mold. The proof should be, and stay, between 70-100. The desserts look delicious!

    We call hummingbird cake Dr Bird cake. We omit the coconut too. I bake in a angel food cake pan. We never frost it, just eat with whipped cream...yummy
