St Louis ribs from Farmfoods UK | Weber summit kamado BBQ

  • Most of us have heard Farmfoods supermarket in Britain are selling Swift St Luois style pork spare ribs for around £10 each. With them being a good brand, accessible and well priced, it's hard to ignore.
    So I loaded the Weber summit kamado bbq with Big K lumpwood charcoal, cherry wood chunks and smoked them slowly. Dusted with Meat church holy cow rub and Angus & Oink pit boss bbq sauce, they turned out really well.
    I used the 321 method as a guide but you may find your ribs cook slower or quicker so adjust your timings to suit.

    Good video . I use cling film under the lid covering the container opening to stop rubs clumping as it helps prevent moisture getting in.

      That’s not a bad idea!
      My many rubs are currently in two different cupboards and only one clumps up, different brands in each cupboard though but, I’ll try the cling film as this is the worst one.

    I discovered these a couple of years ago, I put them in a slow cooker for about 4 hours and then add whatever choice of sauce you want and finish them in the air fryer.

    theres a way to roll a fork in the sinew that u pulled off, we do it in the restraunt makes it so easy to take the full strip off in one go if u cant do it just by hand, u basically just slot one of the teeth down a part of the sinew, then roll the fork and it peels right off

    Hello, from a new viewer. A retired chef of 70yrs before the stove. Now whilst I loved watching the video. A proper rack of ribs. Brilliant. But sadly at my age life is far to short to spend time to get perfect results. Oft to Iceland, buy the ready-made and bung 'em in the oven. Never match home cooked, but as I said life is far to short to faff about Allan&Family

    I get those ribs from farm foods can't go wrong with them . Don't know if you've done them but Sainsbury's do a pack of 2 beef short ribs , they're definitely worth getting . About £11 ish sort out the best looking ones , you won't be disappointed 👍

    I've been cooking mine at 350-375F for 2 hrs , another 1hr covered and 30-45 mins uncovered with a sauce, it doesn't quite fall off the bone but damn, they're still good.

    Nice looking ribs. I have a kamado style BBQ and find that 300-325F for 2 hrs, 1 hr wrapped, and 30 min to set the glaze is enough. I find the bottom of foods tends to burn with Kamado cookers on a longer cook unless you use another deflector e.g. pizza stone, foil boat. This allows you to have a hotter fire for a cleaner burn but the main chamber is the temp you want it. It does mean going through more charcoal though. Your dog looks like he wants some of those ribs 😆

      Obviously, we know these might not be the best ribs you can buy but, when you can travel a short distance to your local store, rummage through the freezer to find the best rack and only pay £10 for the privilege… it’s a sin not to take advantage because they’re so tasty 😋

    Great video!! There's no way I could be cooking for that length of time 😂. I do buy my from costco but im definitely going to give the farmfoods one a go. My method is ... chop up an onion into large pieces, same with a carrot (unpeeled) and a stick of celery, put it all in an electic pressure cooker, use the 3 mins fry option, add some garlic out of a tube and then add some pork stock, or what ever meaty stock you have (I use the knorr jelly ones) i then prepare the ribs by removing that layer of skin and any fatty parts, and then cut then cut the rack in half so they fit in the pressure cooker!. I don't use a rub but obviously you can do whatever you want. I then place the ribs into the stock. Then pressure cook for an hour. When done I take them out, let them dry a bit. I then get a small dish and add some of the cooking stock to that aswell as heinz BBQ sauce (mix it together)... again you can use whatever sauce you like. I then brush the ribs and add to an air fryer for around 10 mins on the meat setting, i open the drawer ever so often to brush more sauce over them, keep them in for however long you want, it all depends on how you like them looking colour wise. Finally remove and brush over more of the sauce, I like to serve with corn on the cob and skin on fries! Its an awesome meals and my lads live it. Its all done in about an hour and a half. Easiest thing in the world and the meat falls off the bone too.

      😄 that’s a detailed description. My dad cooks ribs in a pressure cooker too, quite often without anything added and the meat is really tender, you can taste the pork too. Works really well.
      Just shows how diverse these cuts can be, everyone can cook them in different ways 👍🏼

      I barely use cling film, only for pizza dough so I just get it from a supermarket but I’ve noticed Costco do large rolls.
      Not sure how good it is though.

    New to this so please excuse my question if it's a daft one but how do you get your coals to burn for so long? Do you add more during the cook only I was under the impression that was wrong, cheers

      @@stephenhamill8907 that’s not a daft question Stephen.
      This bbq in particular is well insulated so, to maintain a constant temperature it requires less from the charcoal.
      I also had the vents mostly closed, which creates a lower temperature and less oxygen in the BBQ, hence the coals were just ticking along.
      The brand of charcoal can make a difference too, Weber briquettes work really well for longer cooks 👍🏼

    Try cooking to internal temp and not so much time mate, that’ll stop you over/under cooking. I noticed they looked a bit over when you pulled them to sauce them, but they still looked delicious!

      A few people saying they can’t source them in their local stores.
      You can order the same ribs from online butchers, firefly bbq advertise them, although they’re not a butcher, they make rubs and sauces 👍🏼

      I believe they’ve gone up to around £13 now but still good value.
      Yeh, things like brisket can certainly work out expensive, a good hefty pork shoulder is great value though, feeds a lot of people too 😋

    I pick up small baby backs from the high end Blacker Hall Farm near me as they only bizarrely charge £5 for 2 racks and I get a hefty discount as my son works there so I get them for £1.50 a rack! They are small though. So £10 a rack seems expensive to me but I’ve been meaning to give these a try.

      Just did them they were good and my son loved them. Tons of cartridge in one side though- seems they had not trimmed them correctly for the ‘St Louis’ cut, instead basically leaving them as a full spare rib cut. I’ll watch out for that next time- protruding too far from the bones and you can see the cartridge from the side.

      I’ve never heard a southerner say breakfast dinner and tea.
      A lot of northerners say lunch, it’s like the age old argument of the bread… we call it a barm (barm cake), others call it a bap, bread roll, batch, cob….

Regardless of that, ive been after those ribs for ages as all i can get is baby backs which is half the meat.. Subbed ;)

    St Louis Ribs are just a by product of a boneless Pork Belly with sternum bone and cartilage removed. Why not buy British Pork from a British butcher?

      They’re really good for the price and how accessible they are.
