Nah dude.
First: a cast iron skillet is not used for a smash burger. You use that for a thick burger.
Second: roll your ground beef into a ball WITHOUT MASSAGING IT INTO A PASTE, place it in the center of a flat top griddle (made for stove top) and press down on the patty until it is smashed. Season after smashing on that one side to guarantee the seasoning is full and flavorful, not burned into the patty.
Third: Toast that bun. Don’t you ever disrespect the brioche like this again.
Fourth: use non-salted butter while cooking the patties, drop a couple slices into the pan right when you flip to give a smooth, nice taste that adds to the juicy flavor of a burger.
Last: always use a butcher blend or 75/25, 80/20 blend for a flavorful and juicy burger. Never 90/10. There isn’t enough fat to hold that juice in your patty.
I rate this a 2.7/10.
Also, drop red wine vinegar into the mushrooms with a quarter stick of butter towards the end of the cook, reduce down to almost nothing and you are good.
I have worked in restaurants my whole life. Trust this.
