When I'm at home I mix this into a thick batter and fry it like pancakes... Oh so good
I never would have thought of this! Now, I have a new favorite trail breakfast! I use 1/4 cup Jiffy to 10 ounces water, then add 2 ounces home-smoked sharp cheddar and 1 ounce precooked bacon after it's hydrated.

Love instant grits. The Jiffy mix is a great hack!
I've did this at home with my survival stove and it is amazing I do recommend a touch of salt so pack that with your jiffy mix 100 % recommend and I estimate for 1 person 4 to 5 meals

in texas a box of jiffy cornbread mix is around .50 cents a box...
I was thinking more porridge like. Breakfast and toss in dried fruit, nuts, some PB, honey. I wonder if other flavors would be good also. You have my mind spinning. Seen things like blueberry or the like. Not as versatile but if you were doing just breakfast or wanted a specific flavoring.

Chef, I enjoy your videos and bought one of your books.
The directions on the box say bake at 400 degrees for 15-20 minutes. When we follow your directions, the result is hydrated mix but is it cooked? If I boiled a 1/2 cup mix in a gallon of water untill it reached your same consistency, I would say that that is cooked. I guess I'm asking you the definition of "cooked" when preparing a corn or wheat product. Thank you.
hey DS, ambient cooking is very different from direct cooking. And obviously boiling will give you a very different outcome than baking. Is it cooked? yes. My gauge is level of grittiness/creaminess. A couple quick tastes along the way let you know when it's done.

not quite. You can steam bake it, but will take some time and fuel. Check on this video czcams.com/video/d02yGHp2nr8/video.html for some tips. All the muffin, cake, cornbread batters react about the same.

not sure but if you put the lid and slid the mug next to a fire, the oven effect might make cornbread.

I would just use grits instead, it seems to be more logical than jiffy.

grits also are harder to find in a lot of places, whereas these jiffy mixes are practically everywhere. :)
I like using cornmeal plus salt with 3:1 ratio water:cornmeal. Jiffy takes 2:1 ratio, but too sweet.

Hey Chef! I thought thought that you did a later video using Jiffy mix. Or am I mistaken? I was telling my buddy from the South about using Jiffy as a grit substitute and he thought I was crazy.

3:1 ratio is not usual one.. you prob never made it before that video. Try hot polenta??? Didn't even steer it like it should be.. Please don't make videos on such a stuff any more. At least not on Mediterainian stuff. Go make some doritos or smth.. Greetings from Croatia
Most quick cooking grits/polenta is about 3:1. For European stone ground you will need 4-5:1 Give it a try with some bacon/pancetta and cheese!
