Ingredients: Kuzhambu
· Country mangoes (small) - 6 nos
· Jaggery - 2 tbsp
· Tamarind - large lemon size
· Water - 700 ml
· Turmeric powder -1 tsp
· Salt
· Mustard
· Curry leaves
· Red chillies
Ingredients: Spice paste:
· Sesame oil - 2 tsp
· Asafoetida - 2 tsp
· Coriander seeds - 2 tbsp
· Black pepper - 1 tsp
· Red chillies - 5 nos
· Cumin seeds - 1 tsp
· Fenugreek seeds - 1 tsp
· Channa dal - 1.5 tsp
· Urad dal - 1.5 tsp
· Grated coconut - 2 tbsp
Method:
1. Extract tamarind juice from 700 ml water and bring to a boil along with salt & turmeric.
2. Insert a knife into the mangoes and core them.
3. Drop these mangoes into the tamarind water and pressure cook for 1-2 whistles.
4. Ensure the mangoes are partially covered in tamarind water and NOT fully covered.
5. In a separate wok, heat sesame oil and fry all ingredients mentioned under spice paste.
6. Fry till aromatic. Set aside to cool. Grind this to a fine paste or powder.
7. Open the cooker when pressure subsides and add jaggery.
8. Bring to a boil again.
9. Add the ground spice paste to the cooked mango kuzhambu.
10. In a wok, heat oil and temper mustard seeds, red chillies and curry leaves and pour over the kuzhambu.
11. Serve hot with rice, ghee and lentil chutney (paruppu thuvayal)

I have done this recipe for my mother way back in the mid 90's she was diabetic hence she could eat raw mango but not ripe mango so I use to do this recipe for her I didn't know the name but just the procedure thank you for giving me back a sweet memory I use gundu or nadachalli as my father would get them from Salem for my mother thank you once again stay safe

Tried this Mango recepie came out very nice the other was Mathura Aloo both at first attempt was OK. After 2-3 times it just came very nice adjusted to our taste ( a bit 🌶). Mathura Aloo was simple but liked by one and all at home.

We in Kerala also must make mampazha puliseri during vishu day. Puli inji, manga velirikai pachadi etc., we don't. Use puli in the kuzhambu but thayir we use.Only coconut fenugreek red chilli vellam for gravy.
