    I tried this recipe several months ago and it's absolutely incredible. One of the best meals I ever had. I incorporated some Herbs De Provence and All Spice and WOW. I'm making it again this weekend and I can't wait!

    The "music" is terribly monotonous and too loud. I was very distracted by it. Good presentation, otherwise, and I am going to make this recipe soon.

      Better than a wet towel is a board-sized piece of non-slip fabric, like www.menards.com/main/tools/tool-storage/tool-chests/tool-shop-reg-non-slip-safety-mat-24-x-36/2369998/p-1444428061655.htm. First, because it is used dry, you don't have to place wet material touching the underside of the cutting board, so thin, small wooden boards don't warp from repeated one-sided contact with water. Second, and again because it is used dry, it doesn't eventually dry out during long kitchen sessions and then suddenly slip again after an hour or two of use. Third, one fewer thing to repeatedly launder as it picks up stains, as the non-slip is non-absorbent. If you buy it in a roll you can cut it to exactly fit your needs.

      I bought a cutting board at Target it was non-skid it doesn't slide at all it's pretty cool.

    Looks great, and thanks to the links you provided, I will try this. I don't like to braise with red wine because my food always turns out darker and less appetizing than in videos. That could just be down to my lighting. I hope you remembered to remove the bay leaves before blending. I made that mistake once. I would have had a perfect dish otherwise.

    YES there should be a damp cloth under my cutting board, and yeah I did not have the celery that the recipe calls for but we were just having fun shooting a cooking video seeing if we enjoyed the process.We have since had two kids and will get back to making videos soon.

    coat the meat in flour before you sear. helps create a nice thick gravy when the whole meal is done.

    I use a damp piece of paper towel under the cutting board to keep it from moving, It's dangerous chopping with a sharp knife when your cutting board is moving like that. Also, place your onion in the frig or freezer long enough for it to get nice and cold. Then when you go to slice it, NO TEARS! Still, love the recipe! I'm not a fan of celery anyway, so I could do without it!

    Regarding herbs: 1 tablespoon fresh = 1 teaspoon dried, usually. Looks like you reversed the ratio.

    Going to try this recipe tonight. I'm allergic to wine so can you just add extra stock instead? trying to not screw this up if it's going to take 8 hours.

      Jac, you might have to go to the supermarkets near the less than affluent neighborhoods, if you know what I mean. Some people just know good food. Otherwise pretty much any butcher shop should have it.

      I would say definitely go to a butcher. Publix probably doesn't carry them because they aren't a typical household meat. I am currently in Australia living and I have to go to the butcher to get them. Maybe call ahead to see if they have them on hand or not. GOOD LUCK! :)

      where are you located? generally butchers do not sell beef cheeks due to people not liking the cut because of the name. a wholesale butcher would be more likely to stock the cheeks as they tend to buy full beast. corner butchers tend to buy steak/ roast cuts as they can not afford the cost of lost "scraps"

    For gosh sakes cut the onion in half and the carrot in 2-3 chunks, add garlic cloves whole! WTF? White girl playing Mexican? Also, when searing, drop it in a hot pan and don’t touch it for two minutes.....moving it around breaks the searing action!

      @@ausmericanexperience1129 Your sarcasm aside, if you had respect for wine and the winemakers who invest all the labor of their lives to please us all -- often so years after the winemakers themselves have passed -- you wouldn't first mispronounce "Sauvignon" and then tokenize it into a catchphrase. Some people respect wine, so they refer to it with respect and they take umbrage to referring to it trivially.
