    RECIPES
    MANGO MOUSSE
    INGREDIENTS
    • 1 ½ cups COLD Heavy Cream
    • 1 ½ cups of mango puree.
    • ⅓ cup powdered sugar
    • 3 tablespoons instant vanilla pudding
    PREPARATION
    1. Blend the mangoes in a food processor or blender until the mango puree is creamy and smooth.
    • Take out ½ cup of mango puree and reserve it to cover the mousse.
    • In a large bowl (place the bowl in the freezer for 10 minutes before blending the mixture to speed up the process)
    • Add heavy cream, instant vanilla pudding and powdered sugar.
    • Mix with an electric hand mixer until stiff peaks form.
    • Add the mango puree and mix in an enveloping manner with a spatula until the ingredients are well combined.
    • Transfer the mousse to a pastry bag with a round tip and distribute the mousse into the glass containers.
    • Add the mango puree on top of the freshly whipped cream.
    • Cover each cup with plastic wrap and store in the refrigerator.
    • Let sit in the refrigerator overnight if possible.
    MANGO FLAN
    INGREDIENTS
    ½ cup of milk
    3 eggs
    ¾ cup mango puree
    1 cup of condensed milk
    1 tablespoons vanilla essence
    ½ cup of sugar for the caramel
    PREPARATION
    Preheat the oven to 180°C
    In the blender add the 3 eggs, the regular milk, the condensed milk, the vanilla essence, and the ¾ cup of mango puree. We blend for a minute.
    We put the sugar in a pot over medium heat to make the caramel. When it is ready, we put it in the mold and cover the bottom and sides with it.
    Pour the flan mixture into the mold and place in a bain-marie in the oven for 30 minutes or until a toothpick inserted in it comes out clean.
    Let it rest, then place it in the refrigerator for an hour.
    Serve.
    MANGO CAKE (MANGO BREAD)
    INGREDIENTS
    2 cups all-purpose flour
    ¼ teaspoon salt
    1 teaspoon baking powder
    1 teaspoon baking soda
    ¾ cup white sugar
    ¾ cup butter at room temperature
    3 eggs
    ½ teaspoon ground cinnamon
    2 cups of mango puree
    8x4 baking pan.
    PREPARATION:
    Preheat oven to 350°F / 176°C
    Using a kitchen helper or a mixer, cream the butter and ¾ cup of sugar.
    Add the three eggs and continue beating.
    Wipe down the sides of the container and add the vanilla, cinnamon, salt, baking powder and baking soda. Mix until all ingredients are combined.
    Add, alternating, the flour and mango puree. Use the lowest speed on your mixer or kitchen aid. Be careful not to overmix.
    Grease the mold with oil. Add the mixture. Place the pan in the center of the preheated oven (350°F / 176°C) and bake for 30 to 35 minutes. Insert a toothpick into the center until it comes out clean.
    Place the mold on a rack. Let sit and cool before cutting.
