Try this unique Easy and super delicious Aubergine Recipe all the way from tiny humble food joints in India usually located on the Highways . These eateries are called as " Dhaba " .
Baingan which is Aubergine or Brinjal in Hindi . And Baingan ka Bharta - It is one of the most popular Dhaba style dishes and is available all round the year and always in demand . Dhabas in India make it spicy Hot and loaded with fat . My version is ofcourse modified as per my palate and my lovely Viewer's palate . but if you like more spicy food , feel free to adjust the spice level as per your requirement . Either way it is Smoky and Tasty .
Ingredients :
Aubergine 3 Big ones ( 1.5 kg in total )
cumin seeds 1 tsp
oil 3 Tbsp
garlic cloves 2
Onion 2 Medium
Tomatoes chopped 3 Medium
ginger 1 inch piece
green chilli 1 chopped
coriander stems Chopped
Salt as per taste
red chilli powder 1 tsp
Garam masala 1 tbsp
Green Peas 1 cup ( i have used Frozen )
coriander leaves chopped for garnish
Serve steaming Hot with some chapati , Curd and salad on the side .
