There is a place about an hour away from Sydney (Australia) that has a similar setup to what Stan is doing, they allow overnight camping on weekends and school holidays, it’s brilliant and works really well ..

If you were open in 2015 I wouldn't have moved to Spain . I always rode with no licence in South Wales and police always on me .. Spain is so free for riding enduro

With regards to the barn, subject to the depths of the existing stone walls, i would consider digging out a strip as wide as you want against the end gable and rear elevation, so the external ground level is below inside floor level, if you batter the ground back should be no need for retaining walls. You need to check depth of existing stone walls first to make sure they aren’t too shallow depth, so you don’t undermine the existing wall, as I doubt the walls will be very deep or have any footings. If feasible, it would avoid damp problems internally or the need to install waterproof tanking to the external walls where they are built into the ground currently. Also no need for steps then on LH gable end and more height for external shower area. Probably need either a cut off land drain on the high sides to stop rainwater runoff and/or channel drains/gullies where you lower the ground. Just a suggestion.🏴🇬🇧
