    I make mine with ground pork, shrimp, minced garlic, sambal-oelek, fish sauce, onions, scallions, cucumbers, tomatoes, cilantro, celery, purple cabbage, lime juice, peanuts, and ramen noodles.

      You also can separate boil vermicelli in boiling water (approximately 1 mins is depend on the vermicelli brand too)
      Or also can cooking vermicelli same as my vdo also approximately 1 mins until soft by taste 😊

      Hi thank you for your comment ❤️ Glass noodle salad is a little bit Tricky cook in that it has to be mix at last minute and when we blanch the noodle don't over cooked and when removing mix with a little vegetable oil. And then mix all ingredients together just before eating ❤️

    I don't understand why she adds salt and water to the pork and shrimp. I just stir in fish sauce and sambal-oelek, both of which have plenty of water, and the fish sauce has plenty of salt, and ground pork is a rather moist meat to begin with. I cook the noodles separately and drain the water when they are done.

      Cooking the pork in a little bit of water is like cooking in a little bit of oil. It helps the pork not stick to the pan. And you're cooking it fairly hot so you would need more liquid than the little bit of fish sauce that this small of amount of pork would take to season it. Also, if you don't add another ingredient that is not part of the original dish flavour (sambal oelek). The fish sauce stays uncooked in the dressing. I like the simplicity (and fewer dishes to wash) of putting the pork, shrimp, and noodles in one pot the way it's done here. I think it would have the added benefit of the noodles not clumping up as much too. I wonder if you are filming from Thailand or another country? This affects the availability and variations of ingredients.

    My fish sauce was expired, so I didn't use it and put double quantity of oyster sauce instead, although I know it's not the same.
    I didn't have chili peppers, so I used red bell pepper and cayenne.
    I didn't have shalot so I used red onion.
    Finally, I didn't boil the shrimps and pork, I used a small mix of sesame oil and olive oil.
    It was still really good!

    Notes to self:
    Thai Silver Noodle Salad (2023)
    Service size: 2
    Prep Noodles:
    - 2 small packs Glass Noodles, soaked in cold water
    Prep Veggies:
    - Handful of sliced celery (like julien sliced)
    - 2 tomatoes, de-seeded, cut however you like
    - 1 small shallot OR ¼ small onion, finely sliced
    - Very little chopped cilantro
    Blend Sauce:
    - 4 Garlic Cloves
    - 2-4 Thai Chilis
    - Small piece of Celery (size of 1 Thai chili)
    - 3 Tbsp Lime juice
    - 3 Tbsp Fish sauce
    - 1 tsp Oyster sauce
    - 1 Tbsp Sugar
    - 1/3 tsp Kosher salt
    Cook:
    - ¼ cup water to pan
    - 3 Tbsp minced pork
    - 6 shrimps (add when pork is almost done)
    - Strain and add glass noodles (when shrimp is almost done)
    - Cook until done
    Assemble together in separate bowl:
    - Add cooked stuff, removing most of the liquid (or all of it)
    - Add sauce and mix
    - Add veggies and mix
    - Plate it and serve. Do not put in fridge nor do not serve cold.
