    Welcome to our latest cooking video where we'll show you how to make a delicious mushroom risotto! In this video, we'll take you step-by-step through the process of creating a creamy and savory risotto, loaded with earthy mushrooms and rich Parmesan cheese. We'll start by sautéing the mushrooms until they're perfectly golden brown, then we'll add in the Arborio rice and slowly stir in the broth until it's absorbed and the rice is cooked to perfection.

    Ingredients
    - 4 cups chicken broth, or as needed
    - 3 tablespoons olive oil, divided
    - 1 pound white mushrooms, thinly sliced
    - 2 medium shallots, diced
    - 1 ½ cups Arborio rice
    - ½ cup dry white wine
    - 4 tablespoons butter
    - 3 tablespoons finely chopped parsley
    - 1 cup freshly grated Parmesan cheese
    - sea salt and freshly ground black pepper to taste
    Directions
    1. Gather all ingredients
    2. Warm broth in a saucepan over low heat.
    3. Add 2 tablespoons olive oil in a large saucepan over medium-high heat. Add mushrooms; cook and stir until soft, about 3 minutes. Remove mushrooms and their liquid to a bowl and set aside
    4. Add remaining olive oil to the saucepan. Stir in shallots and cook for 1 minute
    5. Add rice; cook and stir until rice is coated with oil and pale, golden in color, about 2 minutes
    6. Pour in wine, stirring until wine is fully absorbed
    7. Add 1/2 cup warm broth to the rice, and stir until the broth is absorbed. Continue adding broth, 1/2 cup at a time, until the liquid is absorbed, about 15 to 20 minutes
    8. Remove from heat and stir in mushrooms and their liquid, butter, parsley, and Parmesan cheese
    9. Season with salt and pepper and serve
