Roast Chicken in an Offset Smoker, With Chorizo Stuffing

  • I tried my first attempt at a roast chicken in the Pro Smoke offset smoker. I ran it at a higher than normal temperature in order to ensure that it was a hot and fast roast instead of low and slow. Low and slow chicken is good but the skin tends to come out like rubber. I ran the smoker at a temperature of around 180 to 200 degrees Celsius for the duration of the cook.
