You can pinch, but it won't get bushier like Marigold , depending upon type. A few bear only one flower and few bear many. I never try.

I am from Aleppo in northern Syria. When do I plant its seeds? I have seeds now. Can I plant them outdoors (I mean directly in the garden) and is they perennial? The temperature is 15 now.

I am in South Australia, I have planted them in September during spring when temperature nearly 16 degree, outside direct in garden, so you can try few seeds now. Keep soil moist. They are annual plants.

I’m from the Northeast US. Agree with Australia, direct sow them. We plant when the temps are consistently 10c (50f). Hope I converted that right, the US uses Fahrenheit. Let some or all of the sunflowers bloom and die back on the stem. Then cut them, dry and save the seeds. You’ll never need to buy seeds again.
