The loud Jazz music makes this video much funnier to me. I'm not quite sure why. It just makes what their saying sound more like comedic nerd nonsense.
In my head I've always pronounced it similar to ar-bi-tees, not ar-bites. Same idea as Custodes and Astartes, with that pseudo-Latin "-es" suffix at the end, it should have the same pronounciation when it comes to Arbites. You don't call the Custodes "Cus-toads".

Seeing how the word for Arbites is derived from arbiters and arbitration, how else would you pronounce it?
I've always pronounced it Ah-bee-tays, so it sounds similar to astartes (as-tart-ays, not ass-tarts lol)and custo-deez instead of cust-odes.
If we take english as the comparison: Any way you like, really, there is no real consistency in language in general.
