This was great! I used cilantro instead of parsley, blended a large carrot and some cooked finger potatoes in the sauce as well- blended until realllllly smooth. Then I cooked up some tofu, mushrooms, and bok choy in a pan with some seasonings like turmeric, salt, pepper, etc. added the broth, and then the last one to two minutes, added in some udon noodles. It was fantastic. Squeezed a whole bunch of lime over the top of it at the end with another sprinkle of fresh cilantro, and everyone loved it.
”Freshly picked soap” - LOL! Exactly! Love how she obviously loves it herself but has some humour about all of us to whom coriander/cilantro tastes like when you get shampoo in you mouth while showering 😅

I have a tip for this recipe ! Try to add the lime juice at the end of the recipe because generally the taste of it changes a lot during cooking. If you add it at the end it will taste fresher ❤️🫶 I can’t wait to try it at home !

Hey :) this looks amazing! I was just wondering why it needs to be reduced only to then add water? Does it change the texture? :) seems like an unnecessary step but not sure..
Reducing it can enhance flavor, especially if the bottoms or sides get a browned "crust", which is basically caramelization. This is called the Maillard reaction, and all those crispy bits are super flavorful. Adding water and then scraping it will loosen up and dissolve those flavorful bits. This often is done when pan-searing beef, pork, chicken, etc, but with the use of chicken stock or wine! For me personally, I like to reduce down my sauces like this, and then add water to my blender just to extract all that extra puree sticking to it. It's also easier to thin out a sauce to the desired consistency, than to thicken it imo
Please make a tempeh recipe!! It's my favorite vegan protein, its so versatile. I've fried it in strips like a chicken finger, I've chopped it up into a ground beef like texture and it's by far my favorite way to enjoy tacos. About as much protein as a chicken breast in half the mass, plus its fermented so yenno, you'll get them good bacterias 😂

Thank you. I just used my Ninja for the first time. I had it for a year but never knew what to use it for. I baked my baby tomatoes and small peppers in the oven with some olive oil and seasonings. Then I put them in my ninja with parmesan cheese and a spoonful of French onion dip. It was delicious. Poured it over spaghetti. So good.
Yeah if cilantro is one of your favorite ingredients...this is your soup! Sometimes I thicken very thin soups with potato purée or potato starch...I will probably do that instead of noodles because I love a sippable soup.

Made this a few time! I don't have a parsley plant, but thai basil and tarragon are nice herbal flavors to have with it! A scoop of Gochujang is good as well if you want a nice kick

A tip from someone who uses coconut everyday for cooking...try not to boil the coconut milk for long to get the max benefits.. Instead saute your ginger and garlic in oil and blend them and boil with coconut milk just for a minute.

I’m sure you could customize the thickness, but it’s initially reduced to strengthen the flavors of the blend! It’s like a concentrate.
