A traditional rice recipe made on festive occasions like weddings. This is a sweet and flavoured pulao with nuts and raisins, fit for any occasion.

WEDDING RICE RECIPE
Rice (washed and soaked) - 2 cups
Ghee - 3 tbsp
Hot water 3 cups
Caramelized Onions, raisins, and cashew nuts or almonds (use as required)
Whole spices (cinnamon - 2 sticks, cardamom 3, cloves 4 to 5, peppercorns 1/2 tsp & 1 bay leaf)
Sugar - 2 to 3 tbsp (use more if you need sweeter rice)
Salt to taste
Method
1. Fry Onions, raisins, and cashew nuts and set aside.
2. Heat ghee in a pan and fry the whole spices and the bay leaf.
3. Now add the washed and soaked rice and fry for 2 to 3 minutes.
4. Add the sugar and salt to taste
5. Add hot water and let the rice cook.
6. When the water comes to a boil, reduce the flame, and then cover the vessel.
7. Cook the rice for 5 to 6 minutes and switch off the flame and let the rice cook in its own steam.
8. Open the vessel after 15 minutes and fluff the rice.
9. Add the caramelized onions, raisins, and cashew nuts or almonds.
10. Serve Wedding rice with chicken curry
