It's a tradition that Gilles Goujon, a 3 Michelin-starred chef, never deviates from: creating an original menu for New Year's Eve. For the occasion, in addition to flavors, the spectacle must be on the plate. From the first sketches of the dishes to the final taste tests, including his suppliers, most of whom work exclusively for him, we followed the development of this exceptional meal.
