  • If you like pizza (and who doesn't like pizza?) then you'll like this calzone. Emi teaches us how to make one in a wood fired oven. Don't worry, you can cook it in a normal oven too!

I once followed the Chiappa sisters' recipe for the pancake nidi and it was a-m-a-z-i-n-g. Now I can't find the video anywhere, and I wish I could see it again and make the recipe again.... If someone can point me to that video, I'd be forever grateful. It was a video in which they were making the food for a wedding announcement or something similar.

I love how the Calzone is puffing steam from where a hole has been poked! It reminds me of a train lol

I'm a little confused ! I thought that calzone contains only ricotta and mozzarella as a base not tomatoes

Chiappas are right: there are different names. For example, where I come from (Lecce - Puglia) calzone is something different but when we refer to a dish like this we use to call it calzone or focaccia (everyone calls it however it wants). Panzerotto in Lecce is more like a crocchetta, althoug not the same. But, I mean, there are many names for many dishes in Italy. In Brindisi (same region - 30km from Lecce) panzerotto is what we call calzone. I don't know where you come from but I have relatives coming from all around Italy during summer so I can assure you that the name is not that important, it's the taste that matters :) and these girls know something about it

Are they still called toppings if they are in the calzone? Hmmm.... I think some beard scratching is needed on that one.... looks delicious :D
