  • Bardoli is a town in Gujarat near Surat. Its known for its food. Patra is a Gujarati Traditional Farsan which usually steam
    cooked but Bardoli Patra is fried and very crisp. This dried patra is so popular that its exported to other country as well and its also available online. Today I am sharing the perfect recipe and trust me the taste, texture and everything is 110% same as Bardoli's Famous Patra Recipe.
    Ingredients:
    2 Cups Gram flour
    1 Cup Rice Flour
    1/4 tsp Papad Khar/ Baking Soda
    1/4 tsp Cumin Seeds
    1/4 tsp Fennel Seeds
    1 tsp Coriander Seeds
    1 tsp Carom Seeds
    1/4 tsp Asafoetida
    1 tbsp Groundnut Powder
    1 tsp Sesame Seeds
    1 tsp Garlic Paste
    1 tbsp Ginger Chilly Paste
    1 tsp Coriander Cumin Powder
    1/4 tsp Turmeric Powder
    1/2 tsp Red Chilly Powder
    1/4 tsp Garam Masala
    1/4 Cup Jaggery
    2 tbsp Tamarind Water
    Water as Required
    Salt to Taste
    1 tbsp Hot Oil
    1/2 Lemon Juice
    12 Colocasia leaves (known as Alu na paan or alvi na paan or patra)
    Above measurements will make 4 rolls.
    Note:
    1. Batter has to be very thick like paste. Do not add more water.
    2. Roll it very tight.
    3. White cutting it with knife do not apply pressure on it. Use very sharp knife.
    4. Fry it on very low flame.
    5. Store in in Air Tight Container for up to One month.
