Have you ever tried palmini/ heart of palm spaghetti as a pasta substitute? It's not bad. Amazon has it if you can't find it locally. The Low Carb Bread Company makes the best pasta substitute that I've found so far. I missed mac & cheese so I tried the elbow noodles with Anthony's Cheddar Cheese Powder. It was really good.
Made it tonight! Delicious! I only used half of my meatballs. I think I will half my meat next time, because that was plenty. I will freeze the extra. Really yummy!!

It's my go to (although the last couple times, I've simply subbed cottage cheese or Greek yogurt if I'm not in the mood to mess with softening cream cheese. Yeah, it's yummier with the original cream cheese, but still pretty good with cottage or yogurt, and lower Cal to boot I think!)

SO I just did. Thanks Dot, I've been trying to get my partner (who does most of the cooking) to accommodate my keto lifestyle--and in the beginning he could never come up with anything to make me, so I'm going to direct him here and try cooking a few of these myself. Hi, Dot! I made this dish tonight and it was sooooo good! I have never made such good meatballs! Thank you for the recipe. However, I am wondering if the amounts and macros are right. If I read this correctly, all 40 meatballs (which I couldn't come close to getting all of them in) were to go into the skillet? but only 2 cups of zoodles? So if it serves 6, then each person would get 6.5-7 meatballs, and 1/3 c of zoodles? I just want to make sure I have my macros right. Thank you for an awesome recipe
Those numbers are correct. Very meat-heavy dish, and saucy. But you could always add more zoodles if you so desire. And I totally sympathize with how many meatballs I was expecting people to cram into their pots. I need to remember not everyone has as wide a pot as the one I was using. Very glad you liked it though.

I thought we wanted high fat. It seems a little crazy to have all that great fat go to waste. I have to do a lot to be sure I’ve got enough fat in my diet. Seems like the sausage is perfect for adding the fat. I think I’d have to put all that fat into the dish.
You certainly can use the fat if you prefer. This batch I had happened to give off too much grease that would make this dish too oily. Yes there is such a thing as too much even in LCHF/Keto :)
