Episode 58: Lemon Ice Box Pie with my Grandmother

- I am so excited to have my Grandmother with me, she is going to show us how she makes her Lemon Ice Box Pie and let me tell you, It is amazing!!! Also have my Mom and Aunt as the Taste Testers, ain’t nothing like Family!
3 (14 oz) cans sweetened condensed milk
2 cups freshly squeezed or bottled lemon juice
6 large or extra large eggs, separated and room temperature
1 cup white sugar
1 tsp pure lemon extract
2 (16 oz) bags Vanilla Wafers
Baker’s Note: Pour more lemon juice to get the right consistency.
Preheat Oven to 350 degrees
For the Meringue
In a bowl with a hand mixer or stand mixer with whisk attachment, whip 6 egg whites and sugar on high speed until it reaches stiffed peaks, set aside.
For the Lemon Filling
In a large bowl, whisk together sweetened condensed milk, egg yolks, and 1/2 cup of lemon juice until it thickens. Then add lemon extract. Crush up 1/2 bag vanilla wafers in a freezer bag and pour into a 13x9x2 pan, then take whole vanilla wafers and put them on the sides of the pan. Pour half of lemon filling on top, then add second layer of vanilla wafers and some crushed vanilla wafers. Add the rest of the filling and more wafers. Pour Meringue on top and put it in the oven for 10-15 Minutes to lightly brown the meringue. Let it cool completely then place in the Refrigerator and chill for 45 minutes and serve!

I kept looking at her hands and thinking, those hands have saw life! These hands have made a lot of good meals,those hands has raised children and grandchildren. Those hands has seen work! My grandma has Alzheimer's and I miss her cooking so much.

Anthony Strunk I understand how you feel. My grandmother has some memory issues, though she knows her children and most of her grandchildren. My mother and I was taking care of her until suddenly my best friend, my lovely mother suddenly passed away last year. We were the three musketeers...so close!!! It’s amazing you speak about Ms. Ella’s grandmother’s hands! I wrote book about my grandmother titled “#WithTheseHands” check it out on Amazon.
I wish those hands could grease my scalp and just rub all over my head and braid my hair. I really miss that feeling with my grandmothers.

This video has me in joyful tears thinking about all three of my grandmommas. Two have gone home to glory to get their reward and the last one is in a nursing home with Alzheimer's. When I was a kid I remember my mom and grandma always made this with cream cheese, condense milk, lemon juice and vanilla flavoring. Never tried the bake version of this.
