    I made this today. I didn't have horseradish sauce so I left it out and added a pinch of seasoning mix and it turned out delish. Instead of regular potatoes, used Japanese potatoe that's a bit sweet. The dish turned out delish and so delicious.
    I rushed out and bought an Instant Pot 6 years ago but never used it until today and i watched your video step-by-step to use the instant pot. I had no idea it's soo easy. New subscriber here and i will check your vids for more Instant Pot recipes! Thanks!

    Yeah, I learned that the hard way. Garlic will burn up quickly .... Good tip there 100%. The red wine is a nice touch. I use Balsamic Vinegar, but I'm gonna try the wine... So this takes me about an hour and a half with my old-school Presto stovetop pressure cooker. Thinking that the Insta-Pot could save me time...

    Instead of using whole baby potatoes, if you cut yours and you find they get too mushy in the insta-pot then simply boil them separately and add them back in during the final saute and thickening stage. This will rob your stew of some of the starch from the potatoes but simply reserve some of the potato water and add it in with the potatoes and before your slurry.
    This will also aid with leftovers as the potatoes tend to get very mushy upon reheating. To solve this simply separate what you want to eat from your leftovers BEFORE adding the potatoes and slurry. Then when reheating, boil your potatoes first, reheat your stew then add your potatoes, water and slurry and complete the final saute step. Everything will taste even better the second night and the potatoes will be firm and not mushy.

    Excellent and informative video. I am with you on leaving out celery! ...haha...yes it is really good for you that celery... Since this is Papa influenced I thought I'd ask you about this. Not broccoli florets, but broccoli stems, which many people just throw away. The great Jacques Pepin (who loves them mostly for the inner texture when cooked) cuts them from the florets and peels the stems like you would a carrot. I thought maybe cutting those peeled stems up and using them as a subsitute for the potatoes would add to the stew while cutting the starch calories. What do you think?!? BTW you are perfect on camera; watched once and could execute the whole recipe - delicious!

    • @AMindFullMom
      @AMindFullMom  Před rokem +2

      Oh, I am not sure about the broccoli stems. They may be a bit overpowering. I would instead try cauliflower stems, which would be more mild in flavor. You could also try turnips. Turnips contain fewer calories per serving than potatoes -- 18 calories per cup of cubed turnip, compared with 59 for russet potatoes. And thank you for your compliment.

    Hi I have a question, do the veg get overcooked? I was thinking of either cooking them separately or pot-in-pot with foil to slightly reduce the cooking. What do you think? I really don’t like overcooked carrots.

    • @AMindFullMom
      @AMindFullMom  Před rokem

      I love the way the vegetables turn out in this stew. They are cut a bit larger and are soft and flavorful but not mushy. If you want firmer carrots, I would cook for 20 minutes then allow for a full pressure release. Add the carrots (and potatoes) and cook for 10 minutes with another full pressure release

    I would love to see more one pot meals like chicken and rice or a meat/starch etc. I LOVE your recipes!
    There’s this one recipe for the IP for chicken thighs and rice and EVERY time I make it there’s a burn notice because she says to put tomato paste in with the veggies and dry rice before adding the stock. I do usually deglaze very well. But I’ll curious what you may have!
    Or even maybe some recipes that allow for one to one swaps like with cream and milk to a non diary option?

    • @AMindFullMom
      @AMindFullMom  Před rokem +1

      Thanks for the suggestions! As for the recipe that causes a burn notice, I would suggest putting the tomato paste on top of the rice and not mix into it AFTER the stock. Obviously, that is not my recipe so I can't fully tell you the issues, but that would be my hunch.

    I guess my appetite is vastly different from yours. If you only used one pound of stew meat I can understand why you didn't get any with teenage boys around. :) I always use two to two-and-a-half pounds of stew meat and fill the instant pot with onions, potatoes and carrots with a couple of ribs of celery or a couple half-ears of corn on the cob for good measure. I always plan on leftovers for two reasons. I won't have to cook tomorrow and I think the flavors will become more intense overnight. I was raised on leftovers and don't understand why anyone would refuse to eat'em.

    • @AMindFullMom
      @AMindFullMom  Před 10 měsíci
