Fact correction : Potatoes were added to the Kolkata Biryani not because Wajid Ali Shah was poor. Back then the exiled King of Awadh had a taste for all things exotic and potatoes were just brought into India by the Portuguese.
Nice video. I like you how guys present your videos 😊

    • @PrantikMitra-yu4me

Actually, there are two sides to the story. Some say it was added as an exotic vegetable others say it was the cheaper alternative to meat which was expensive for the working class of the mughals. In fact, potato was introduced to India in the 17th century and Wajid Ali Shah was sent on exile in the 19th century so hard to believe it was still exotic since it was grown abundantly in Bengal by then.
But one thing is constant, everyone falls in love with the flavourful aloo in the biryani.

Also you can try baked rasgolla, baked doi, baked kalakand, monohora, sitabhog, mihidana etc. in sweets and alu kabli, churmur, fishfry, prawn cutlet, prawn kabiraji, topse fry, fish finger as evening snacks. In main course combination of basanti pulao and mutton kosha, bhetki paturi etc.

It seems unnecessary to speak Bung-holi ,if someone is in Kolkata...From what I have learnt, nothing in Kolkata is actually a credit of Bung-holies. Bung-holies were only consumers and followers throughout history...Not creators or pioneers of anything..Kolkata was relevant because of the melting pot of British and other dominating Indian cultures, not because of Bung-holies.

Actually Rabindranath thakur was not very fond of chicken cutlet. So the chef rolled the cutlet into such a way that blew his mind. Kobi means poet, and raji means approved. As the recipe was approved by him, hence the name "kobiraji".
This is what I heard, not sure if the story is true or not.

    Fish Fry - Apanjan (Kalighat)
Biriyani - try Dada Boudi as well since you have already tried Arsalan.
Roll - Anamika Roll Center near New Alipore Triangular Park (it uses a totally different paratha. It does not use chewy laccha paratha)
Also try Kolkata Chinese dishes. Go to China Town (Tangra) and eat at Golden Joy/Big Boss/Beijing.
Try out Bengali thali/ALa Carte at 6 Ballygunge Place (visit the main center only. The other branches sometimes are not that consistent with taste)
Dhokar Dalna, Mocha r chop, Koraishuti r kochuri, Chingri Malaikari, Basanti Pulao with Mutton etc
If you want to have real Bengali meal, visit Kasturi (near Free School Street fire station. There are a few branches which are nearby. Only go to the main Kasturi.)

FACT: K. C. Das borrowed the dish. But he failed to replicate the complex preparation process in Kolkata, and landed up with a much simpler rasgullas that can be prepared at home.
