      +altaroffire56 +lycoria isn't wrong in that they're lined but on top of that, metal is mostly okay. The technically rule is not to use silverware and by silverware they mean actual silver, not just metals. Often misinterpreted as metals being not allowed.

    Wow I'm born and raised in NY and never knew sturgeon was from here. Over time I've developed a palette for caviar but I only get it when I'm at a restaurant that serves it, sort of a treat to myself but not often lol. Thanks for the info. :-)

    An important point to make here is that all fish roe is pretty much the same in terms of nutritional value. The balance of omega-3 fatty acids, proteins and vitamins differs, but not by much. It really comes down to taste more than anything else. Correctly prepared pike roe can pretty easily rival the "real caviar" (which is more of a marketing term than any tangible characteristic - depending on the kind of sturgeon and technology employed in preparing it, caviars may have little in common)

    The classic way in Russia and surroundings: White bread + a little spread of butter + Caviar. OR caviar + crepes. Needless to say, it goes very well with Vodka (especially the red caviar) or black Russian tea.

    Roe is also considered a delicacy because of the intense nutrition that it contains, especially all of the fat-soluble vitamins. Certain indigenous cultures would go out of their way to harvest, dry, and consume fish roe when couples were conceiving so as to have the healthiest children possible.

    Daniel, really liked your video, very informative, especially for people who have never tasted domestic caviar. I love some domestic caviar, but like you pointed out, if you go too cheap you will never even come close to what caviar tastes like. Some less expensive brands are very good and come close enough to good caviar you can appreciate it. This was the first video of yours I have watched, but see that you have others, so will be watching them too.

    Brighton beach, which is about as Eastern European as it gets in Brooklyn is a great neighborhood to get a wide variety of different caviar. Prices range which is great of course but it's all quality brands domestic and imported.

    Let the mix stand in the refrigerator overnight. Salt and vinegar will kill possible parasites (it's a raw fish product after all). Oil will be absorbed by the roe and it will gain in volume. Besides, oil is a natural preservative and it will give it extra moisture, so it doesn't form a crust or goes sticky.
    Before serving, feel free to finely chop green onions, chives or whatever suits your taste and use that for garnish or mix it in.

    Here's what I recommend: get a sack of fresh pike roe from local fishermen if you can. Now is exactly the season. Cut the sack open and separate the roe from the sack. Rub the roe through the sift/screen of apropriate aperture to separate remaining fragments of the sack. Bring sufficient volume of saturated salty water solution to a boil, take it off the heat, let it cool slightly and dump the roe into it, mixing it with a spoon or a spatula.

    The slime that envelops the eggs will boil and turn, staying on top, whereas the eggs should sink. Remove the turned slime from the surface with a skimmer and drain the roe. You don't want to keep it there too long, so as not to cook it through. All of this should take about one minute. Once drained, add 25% of roe's volume vegetable oil or deodorized fish oil, 1 tbsp salt per pound, 0-2 tbsp vinegar and mix well.

    In Sweden we eat caviar from the "Stonebiter" fish. Cyclopterus lumpus. Most notable version is Kalles Kaviar. It's not that expensive and it's mostly eaten on Sandwiches or hard bread. I don't like beluga caviar, but I will eat sometime the Swedish version of Caviar.

    I have a suggestion, if you are still looking for them, I was thinking tou could do something on yoghurt. I know it sounds daft but I was doing a lab on the microbacteria that make it and though it might interest other people. I have no idea if there would be enough information to make a video about but it was just a thought. :)

    i have two questions, what is the cheapest you want to buy for caviar that still has a
    good taste, because even $40 can be a little expensive for me, but like you said some of the super cheap stuff tastes bad. Also have you tried salmon roe caviar, and would you recommend it to some one who doesnt have a whole lot of money to spend?

    That orange caviar (I believe it's from Salmon) is very sweet, It don't even taste like fish at all but like candy..They also use it to make a great Sushi called Ebiko..That alone is enough to get people trying caviar in my opinion (was me) I will soon be getting a small can from my Russian pal.

    I got some caviar yesterday and it was like 4 dollars but it was in a fancy little canned jar and it's dark blue is it the legit shit or does it have to be 300 bucks to be called a real tight caviar ?

    Korean caviar is resonantly priced, and VERY SALTY, but that is what makes it a traditional dish, i think that all caviar is valuable because of the fact that it comes from hundreds of unborn baby fish! but it is very good and should be eaten with respect.

    Exactly the point I made in another comment here. Russia and Iran are known to farm sturgeon and harvest the roe without killing the fish. At least that goes for the bigger, more valuable kinds of sturgeon that take a while to mature. "Sterlyad", for example, is not a very valuable kind, so it may very well be killed in the process, but then again it is being cultivated in such numbers and matures so quickly that it's not a problem.

    I'm a vegetarain now but years ago(before I was a vegetarian) I was served caviar at a dinner party that was stirfried with asain sauces and fish. It tasted terrible. Is caviar meant to be served raw or is it meant to be cooked? I prefer eating seaweed these days. Hehe :) Very informative video though. :)

    The first time I had caviar was in "caviar pie" which was layered cream cheese, chopped egg, chive, onion, creme friache/sour cream, and the top covered in caviar; sort of a fancy layer dip to be spread on toast.

    Never had caviar, probably never will.
    I have had fish eggs though. lol not american caviar, just fish eggs. If you catch a fish with eggs you can actually take out the egg sacs whole and pan fry them in oil. So it's like a strange fish egg sausage. It's rather crumbly in texture and looks like couscous . This is from pickerel/walleye.
    In the town where I was born there was a fishing company that made caviar out of the local river sturgeon eggs.

    1:40 says you cant call it caviar unless it comes from the caspian or black sea but then on 3:40 says in new york city for 5 cents you can get the best "domestic caviar". xD

      Yes! Significantly different. I didn't think it would until I tried sturgeon at new year's party. So much better it was absurd. But the price increase is crazy. For just the small jar it was $80 USD. I would say it was certainly worth it!

    I've never had caviar before. But if I were to spend that much money on a delicacy, why would I mask the flavor with such overpowering tastes as onions, eggs, and chives? Doesn't make much sense to me.

    also toasted bread is hard on the palate. Eggs, sour cream, chives and onions will change the taste of the caviar. And why would you pay good money for caviar if all youre going to taste is onion. Im sure these addition help if the caviar is of low quality. If the quality is there, eat it alone with a shot of classic russian vodka.

    I wouldn't serve caviar with all that other stuff. Not good. Serve it on (unsalted) buttered toast points or simply with with mother of pearl spoons. I've been thinking of trying Tsar Nicoulai from California this Christmas. I had Beluga caviar years and years ago, it's now illegal here. It was incredible. I still think about it...ahhhh

    I tried American caviar for a little jar was $10 so I guess it wasn't really the real stuff and very salty
    so the next time I'm going to try the more expensive one....... My is going to try caviar for the first time so I'm really going to have to get the expensive one.

    Actually not everybody likes caviar. And there is also the matter about different types have diferent flavors and textures which can be good or bad depending on the taste of each person.

    You probably won't get anything good for $40. That is if you specifically mean sturgeon roe. A cheaper, and by no means worse, alternative is the so-called "red caviar", made of salmon roe. I personally like it better than the sturgeon product. Probably because I prefer using it with vodka whereas sturgeon roe calls for a more gentle drink like champaigne. I frequently make my own from pike or carp (Cyprinus carpio). I made a batch of 6 pounds today for tomorrow's party.
