Pasteli: Greek Sesame Honey Bars

    Ingredients:
    1 and 1/2 cups Greek Honey
    3 cups sesame seeds, raw
    1 cup almonds or pistachios
    1/2 teaspoon salt
    ​optional: orange zest, 1-2 tablespoons orange juice, cardamom seeds, vanilla extract
    Preheat oven to 350 degrees Fahrenheit, 177 degrees Celsius.
    ​Spread out the sesame seeds and almonds on a baking sheet lined with parchment paper and place in the preheated oven to toast.
    ​Toast them for 5-7 minutes on the middle rack.
    ​While the seeds and nuts are toasting, zest the orange and set the zest aside.
    ​Place the honey, salt, and orange juice in a small saucepan. Bring to a boil.
    Reduce the heat and cook the sweet mixture about 5 minutes. Remove from heat.
    ​Chop the toasted almonds into small to medium sized pieces.
    ​Carefully pour the toasted seeds and chopped almonds into the honey mixture along with the orange zest.
    Mix everything very well, off the heat, until combined.
    ​Pour the mixture onto a baking dish/pan lined with parchment paper and spread it evenly. Brushing the spatula with olive oil will make it easier to spread the candy mixture.
    ​If you like this dessert thick, use an 8x8 inch baking dish lined with parchment paper.
    ​If you like thinner bars, spread the mixture onto a half sheet baking tray lined with parchment paper or a 9x 13 inch baking dish.
    ​Allow to come to room temperature. Cover with plastic wrap and set in the refrigerator for a few hours to harden.
    Cut it in your preferred size and shape.

    Thank you for your orange zest idea and your oil in the measuring cup or whatever to help the sticky stuff come out .The best trick I've learned since my Grandmother taught me to cook .The lemon is good too

    I lost my recipe and have been looking everywhere for a sesame candy recipe without sugar. Why would anyone put sugar in sesame candy? You can get it hard by adding less honey or spreading it thinly on a cookie sheet to cool. Sugar defeats the whole purpose of a healthy candy imo. So glad you posted this, never tried orange peel before but will definately be trying it.

      NoStoppingit7 people put sugar in the candy cause they want the candy to hardened better, candy like if I makes any sense. This recipe came out amazing, but it’s sticky, not hard.

    Just found this channel. These look delish. I'm going with 1/2 sugar as I want a hard candy. Sesame bars are a great trail snack. I could go for days with a backpack full and enough water.

    Same base as Helva. I have some black sesame seeds and might try something like this with them. But I would not cook the honey so much as it loses too much of it nutrients when heated.

    I love greek food, my bestie is greek and her yayah (grandmother) has taught us some receipes. I love hava, and sponakopeta, im not big on baklava, to much sugar. There are other dishes, and im sorry my spelling is wrong, but we have a greek festival hete the first weekend in sept. And wow, the gyros, and grape wraps are sooo good. Im german-irish my self and me and my BFF teach each other different receipes from each of our heritage. I loving learning and trying new things. Just like i tell my kids, how are you gonna know if you like if you dont try it.

    Hi Dimitra I love pasteli I've never tried to make it, I do prefer the kind that snaps so I will try mixing the honey with sugar as you suggested. I will have to get together with my mum and make it now... Have you made a video making Moustalevria?

    I made these but had to use regular honey. I don’t know if it was the different honey but these were not firm enough to stay in the shape I cut them in. I ended up rolling them into balls. I put them on wax paper but they stick to the paper. If I made them again I would roll them in dry sesame seeds so they’re not as sticky. Also, I’m pretty sure the amount made in the video is half the recipe. Had I known that I would have done the same. I’m now stuck with tons of these and I’m the only one who likes them.

    You should Oil your paper with sesame oil, or any neutral tasting oil !! Use Pam/Cooking Spray on measuring cups So that the honey will come out easier, and on your spatula and spoons---

    I love it but when you cook the honey it destroys its enzymes so there’s no point in taking a good quality honey, just use any honey.

      Toasting releases the flavour of sesame and the sesame oil inside of it gets activated. Same goes of any nuts or spices. Praying makes it taste 10 times better

    Granola bars do not require oats. Using honey it will stay fresh so very much longer like almost forever. It is very hard to score pick so it doesn't harden up the candy ever. I just purchased a new unfiltered raw honey that was 16 oz not 40 oz is like I usually get. This recipe is going to take just about all of my honey.

      That should say Hydroscopic. I voice type a hundred percent of the time and the words are all correct when I hit the send Arrow but something happens when the message goes through and gets printed. Half of the words are wrong and I can't go through and fix every message at that point. I fix them before I send them.

      Honey does NOT become toxic upon direct heating-or indirect, for that matter.
      Heating is done to “pasteurized” honey to lessen the risk that harmful bacteria may have been introduced through handling. Heating honey makes it become less viscous, so honey packagers will heat honey so that it will better flow in delivery pipes and through spigots and into the bottles or jars.
      This commercial heating does nothing at all to make the honey more toxic, but it does alter the honey a bit by driving off delicate aromatics and flavoring agents. Uncooked honey simply tastes better.
      Even cooked, honey can contain endospores of bacteria that can cause botulism. The concentration of these endospores is very, very low, so an healthty adult has no trouble handling any spores or emerged bacteria that might occur upon ingestion. Infants under the age of 1 year or so do not have a sufficiently robust immune defense against this bacteria and might be harmed by them, so we explain that babies and children under 1-year should not be given honey…just in case.
      Cooking with honey produces some of the most wonderfully sweet food made around the world…and none of them become toxic by heating the honey.
      I would be quite interested in where you heard or read that heating honey (directly…whatever that distinction actually means) causes it to become toxic. Seriously-i am interested and ask that you make a comment in your original question or here, below my
