    I'm doing the same project. Currently working on the electronics/enclosure. I'm going to mill my own parts instead of a kit, not that I wouldn't mind the kit but I like to make my own parts. I'm also an avid 3D printer person. I like the sections where you're trying 3D parts. I actually considered 3D printing the parts to do the conversion then using the machine to cut the final parts. I'll be following you on your quest. Regarding the saddle problems, I know people have had success with the grinder, I have a friend who I can borrow their mill so I'm not too concerned. If I recall, the company you bought your kit from offers to mill the saddle for a pretty reasonable price, if it's not him I know I saw it somewhere in the vast conversion videos.

      I considered starting with 3D printed parts too. Was thinking about 3D printing anti-backlash nuts for the Acme screws, and then 3D printing timing belt pulleys to press-fit over the stock hand-wheels for the steppers. But I got a kit instead.
      I'm putting together video #9 now, after that, I'll start the enclosure.
      I knew Dave (the maker of the kit) would mill the saddle for like $15. The saddle would ship pretty cheap too in a Flat-Rate USPS box too. Where I'm at though, I've had mail stolen, and miss-delivered multiple times and didn't want to chance losing part of my mill that is custom fit.
