Patol Paneer Niramish Recipe
*Ingredients:*
- 250 grams parwal (pointed gourd)
- 200 grams paneer (cottage cheese)
- 2 medium-sized potatoes
- 2 tablespoons mustard oil
- 1 teaspoon cumin seeds
- 2 bay leaves
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala powder
- 1 teaspoon ginger paste
- 2 tomatoes, finely chopped
- 1 green chili, slit
- Salt to taste
- Sugar to taste
- Fresh coriander leaves for garnishing
*Instructions:*
1. *Preparation:*
- Wash the parwals, peel them partially, and cut them into halves.
- Cut the paneer into cubes.
- Peel and cut the potatoes into small cubes.
2. *Frying:*
- Heat mustard oil in a pan until it smokes and then lower the heat.
- Fry the parwals until they are golden brown. Remove and set aside.
- In the same oil, fry the paneer cubes until they are golden brown. Remove and set aside.
- Fry the potato cubes until they are golden brown. Remove and set aside.
3. *Tempering:*
- In the same pan, add a bit more oil if needed.
- Add cumin seeds and bay leaves. Let them splutter.
- Add the ginger paste and sauté for a minute until the raw smell goes away.
4. *Cooking the Masala:*
- Add the chopped tomatoes and green chili to the pan.
- Cook until the tomatoes turn soft and the oil separates from the masala.
- Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well and cook for a couple of minutes.
5. *Combining:*
- Add the fried parwals, potatoes, and paneer cubes to the masala.
- Mix everything gently to coat the vegetables and paneer with the spices.
- Add a cup of water to the pan and bring it to a boil.
- Lower the heat and let it simmer for about 10 minutes until the vegetables are cooked and the gravy thickens.
6. *Finishing Touch:*
- Add garam masala powder and a pinch of sugar to balance the flavors.
- Mix well and cook for another 2 minutes.
- Garnish with fresh coriander leaves.
7. *Serving:*
- Serve the Patol Paneer Niramish hot with steamed rice or roti.
