Josh-Cajun Chicken Fettuccine Alfredo
Ingredients
8 oz dried fettuccine
¼ cup butter
1 Tbsp Tony Chachere’s
1 Tbsp paprika
¼ diced onion
4 cloves minced garlic
2 Tbsp flour
12 ounces whole milk
1 Tbsp tomato paste
1 Tbsp hot sauce
Parmesan cheese
1 chicken breast
Put pasta in boiling water
Add butter to a large sautee pan
Sautee onion and garlic until translucent then add Tony Chachere’s and paprika
Butterfly chicken breast, season with tony Chachere’s, and add to a sautee pan with a squirt of oil.
Add flour to the onion and garlic and stir for 2 minutes before adding milk, and tomato paste.
Drain the pasta, flip the chicken, sautee the pasta in the sauce and add some parm, slice the chicken, toss pasta in a bowl, top with chicken and chives.

Nicole- Triple S Rigatoni (it’s spicy, it’s sultry, it's sexy!)
Ingredients
1 lb rigatoni rigate, dry
2 tablespoons butter
2 tablespoons good olive oil
5 anchovy filets
1 shallot, diced
3 tablespoons tomato paste
2 garlic cloves
3 jarred calabrian chilis
⅓ cup cherry tomatoes
3 tablespoons tomato passata
¼ cup hand grated pecorino
1 burrata ball
Pepper
Salt
Olive oil
1 bunch pretty basil
Toss pasta into salted, boiling water. Allow to cook for 7 minutes.
Add butter and olive oil to a pan.
Add in anchovy. Tilt the pan to one side, away from your face. Allow anchovies to dissolve in the fat.
Add the shallot. Cook until translucent. Add tomato paste. Stir and cook for about 2 minutes.
Create a paste with the calabrian chili, garlic, and salt on the cutting board.
Add spicy garlic paste to the pan. Cook . Add cherry tomatoes. Add passata. Squish them down as they cook.
While the sauce is cooking, add a ladle of pasta water.
Emulsify.
Toss in the pasta. Add the pecorino.
Emulsify some more. Add more pasta water if it looks too tacky.
Plate up.
Add burrata.
Sprinkle pepper, salt, and olive oil on the top of the burrata.
Top with basil leaves.

Trevor - Creamy Pancetta Pasta
½ lb diced pancetta
3 garlic cloves minced
1 cup heavy cream
Salt
Pepper
1 Block Parmigiano Reggiano
1 Serving Cooked Spaghetti
Add pancetta and garlic to a pan and cook until pancetta is crispy and the fat has rendered.
Scoop out pancetta and garlic and set aside. Add cream to pan and heat over very low heat.
Grate in a hefty amount of cheese and add salt and pepper.
Add in cooked pasta and pancetta and garlic and toss.
Boom skiddly bop, pasta’s done.

I make the pasta he described very often haha Noodles, butter, olive oil, pasta water, dry herbs and jarred minced garlic. BOOM, dinner. I'm vegan, so I will add some roughly chopped "chicken" patties in there for some protein.
Tbh Josh’s pasta was also pretty simple
If you typically have cream, parmesan and pancetta in your pantry.
About the only thing I might add to Trevor's would be a small bit of that tubed roasted garlic (or some of my own if I have any set aside). But I love the way garlic and white sauces go together

Trevor's is the only one that looks like something I would reasonably make without having to think about it 2 days beforehand.
Trevor's was so simple that I could taste it through the screen.
And I friggen' loved it.
Cannot imagine a riskier shirt choice for Nicole cooking these recipes.

Hello, Italian descendant here; and Nicole is not wrong about the anchovies being a quintessential part of Italian cuisine. They even keep a bottle of anchovy oil on the table and treat it like ketchup even if the dishes don't have The ingredient in there. Can confirm from Sicilian grandparents lol

Lol I felt Trevor's noodles with dried herbs with my soul. I grew up loving to cook things but my go to snack was always, and honestly at 35 still is, noodles with butter and a splash if soy sauce. Idk why. But it's delicious.

20:45 The Austrian term for whipped cream is "Schlagobers", "obers" meaning cream and "schlag" meaning whipped. Well, schlag literally translates to punch (i.e. hit), but whipping or punching your cream is basically the same difference. In German it's Schlagsahne (schlag remains, but cream is Sahne, not Obers).

I grew up in austria and we'd get the apfel strudel at dessert and hearing someone say SCHLAG?! just brought back core memories of austrian waiters offering me whipped cream as a child.
Anchovies also have naturally occuring MSG so that also explains why it makes the pasta better

My go to simple pasta dish is Cacio e pepe. 4 ingredients (Pasta, olive oil, black pepper, pecorino romano), done in around 8-10 minutes, full of flavor.

We do something kinda a mix of all of these: chicken, pancetta and mushrooms in a creamy sauce perked up with a bit of Dijon mustard and paprika.

Trevor's spaghetti looks like something that would be in an animated movie. There would be a cooking scene that everyone would go nuts over on Tik Tok. Pristine comfort food vibes
I'm pretty sure that 'schlag' (20:42) being used as a term for whipped cream is quite an ashkenazi jewish thing. My yiddish speaking grandmother certainly used it. That would also explain why Josh and Julia's family use it, but Trevor and the others hadn't heard of it.
chopsticks are the best for most foods. I love chopsticks. Anchovy past, souse and bits are in soo many things. love anchovies too. just a few things Anchovies are in Worcestershire, Caesar dressing and Gardetto's because they use Worcestershire.
Sardines are more common in Italian cuisine. Where my family is from in Southern Italy we use them all the time. Anchovies are an American ingredient. The biggest difference is that there are a lot more bones in sardines which adds an earthy flavor to whatever you add them to. A dish I recommend trying is Pasta con sarde which is a Sicilian dish traditionally made with sardines, pine nuts and bread crumbs with pasta.
Anchovies are not "an American food", if you are referring to the USA. They are mostly consumed in various sauces here. We don't typically eat either fish fresh except along the coast. Most US citizens you asked would describe either fish as disgusting (I quite like them).
Maybe in Central or South America they are more popular.
I'm in Canada, not the USA, but I work in an Italian grocery store and both kinds of fish are popular sellers at the store, as well as salted cod. Maybe it just depends on which area in Italy you're from, and what kinds of dishes are popular there, etc? I like both tbh
@@bcaye Not saying anchovies are an American food like it's a household staple but it is more common here in the US than sardines compared to Italy. And you're right, "fresh" fish is more commonly prepared and eaten along the coast because that's where most fish is sourced, if it's available seasonally. Anchovies, more often than not, are canned or stored in glass jars to keep for longer, but some places do sell them fresh. I have no idea about Central or South America.

Masks the funk lol But that would make sense if those fish are popular at the store you work at, a lot of people who cook Italian cuisine eat a lot of different varieties.

I pointed out that few modern US citizen consume anchovies*other* than as a sauce ingredient and the recipes for the sauce is not from the US. You can't label something that's barely consumed and seen as disgusting by the majority as an ingredient of that country.

My quick pasta is pasta alla vodka! Pick you favorite nood. Sauce: onions, garlic, tomato paste, salt, pepper, red pepper flakes, vodka, butter, milk, parm. Sometimes i throw cherry tomatoes in and chicken.

Josh, buy some celery, chop it up, freeze it spread out on a baking dish, then store in a freezer bag. Then you'll always have celery!
You can also just freeze the whole thing and just brake off as needed

I always love to have either tortellini or ravioli and I mix alfredo sauce, tomato sauce, and peso sauce and then I put a bunch of different cheeses on top.
It's hard enough just watching this great food be made on a screen... I can't imagine the desire going on for the crew having to stand around a watch them eat it while smelling it lol.

Weekday low carb pasta: spaghetti squash poked and microwaved for like 7 minutes then cut it and gut it. Toss in olive (I love), garlic, salt, and pepper I also add basil

Schlagsahne is German for whipped cream, with schlag meaning "hit" or "beat". Schlagzeug means drums, or "thing you hit"

Austrian here. Obers (or Sahne or Rahm) whipped is called Schlagobers, so Schlag is a prefix for it being whipped, just like *nushles name cause forgot* said!

Hearing a normal palm heel strike made me rewind to make sure I wasn't losing it
My go to is blackened garlic chicken with salt, pepper, African smoke seasoning and garlic, then empty the pan, put in butter, fresh garlic, fry, add Parmigiano regiano, let it go crispy, then add more butter, flour, make a roux, add Alfredo sauce and lots of pepper, and toss your choice of noodle with the sauce and chicken. Easy 15 min recipe
