It's impossible landing on any other card when following the instructions. Every turn he counts to a different number, sometimes you have five moves, sometimes three and so on, because he knows that this exact number of moves makes it impossible to land on a specific card. And this card is then removed :D
If anyone is curious on why this works, it's to do with even and odd numbers. If you replay the video and try to fail the test, you literally cant, because to get to a place that he will remove, you would need either an even or odd number of turns. if its even, then he will count to an odd number of turns, and if its odd, then he will count to an even number of terms.
i think i have understood the trick, it can be shown in maths. his number of moves are 1,7,3,7,5,7,9 how find a route to each card from the start card, count the steps you move, and see if the number of moves for each card is odd or even (write it on the back), you should now get a checker map like this: (E for Even, O for odd, and start point can be set in any of the E card.) Every move you move from an odd square to an even square or vice versa, and every odd amount of moves, you do that as well. It's mathematically impossible to get it wrong, which means that if he got it wrong, the viewer is at fault.

Proof that it’s not magic:
Let’s imagine the stickers as a matrix, where instead of symbols we assign every sticker a number (a 0 or a 1) in a way that every 1 is vertically and diagonally connected only to 0s and vice versa. Thus we get such matrix:

Notice, that it is impossible to move from 0 to 0 and from 1 to 1. Thus, with every move, we will be switching from 1 to 0 or from 0 to 1. Knowing that we start from a 1 (in the top right corner), we can predict that after the first move, we will be on a 0, after a second - on 1, after a third - on 0 and etc. We can turn this observation into a rule by stating that after every uneven move, we will be on a 0 and after an even, on a 1. Now, if we remove a sticker with a number 0 after an even move (when we are on a 1) and a 1 after an uneven move (when we are on a 0), we are guaranteed that it won’t be the one the player is currently at. The author employs this strategy in order to lead us to the last sticker which he easily guesses as there are no other ones available.
If you wanted to expand this trick, you can create an even bigger matrix of stickers like this, and the rule would still work:

It’s simple, on any odd move you can’t be on the edge or the centre of the square and on any even move you are forced to be on the edge or the centre.

Ryan Walsh yep he only ever gives odd numbers, so using math, he can determine which squares are inaccessible and just eliminate them. Has nothing to do with predicting our thoughts and more to do with “prediction” through mathematics. Anyone with enough time on their hands and knowledge in mathematics can do this.
It's literally impossible to be on the ones he eliminates without breaking the rules, it's not that you are predictable, it is that he is a manipulative villain.

I was on the sad face on my 1st elimination , on the wavy lines on the 2nd, then chose the smiley face because the one I was on was eliminated so I was on the Q for my 3rd and last elimination
It's not about being predictable, the amount of moves he tells you to do was intentionally measured, to make sure, that your finger CAN'T be on that square.

I think maybe he predicted the squares that were further from the others because most of us will keep going instead of revisit squares so we will pick the ones that are together.

Every move you move from an odd square to an even square or vice versa, and every odd amount of moves, you do that as well. It's mathematically impossible to get it wrong, which means that if he got it wrong, the viewer is at fault.
