Finnish Cardamom Bread | Pullapitko | Nisu

  • The Cardamom Bread is one of the most well-known Finnish food items. It is also enjoyed in the US made by Finnish immigrants who call it "nisu." Here I show how to make it at home.
    Ingredients:
    5 dl lukewarm milk
    1 kg AP flour
    2 dl sugar
    1 egg
    2 tsp salt
    20 g dry yeast
    150 g butter
    1 tbl cardamom

    Nice! appreciate you calling it pullapitko first (not nisua) I've seen it filled with vanilla cream and prune filling for Christmas -like in joulutorttu. Going to try that cardamom filling next time.

      Nisua especially sounds weird to Finns, because it's an inflected case of "nisu", ie "Some nisu". So it's like saying "Here's some chicken soup recipe." in English. Either way both of those words are unknown to Finns from Finland!

      Whole pods so I don't know how that will vary in amount to use? I like some crunch though

    If you had used your arm muscles to mix the dough instead of an electric mixer, your arms would look like Popeye's arms.
    I enjoyed watching you make the "braided long bun" bread. If you have neighbors and they smelled that bread baking, they would all want to come over and visit and they probably would not want to leave because the food is so good.

    nää sun videot on huippuja. facebookissa oli näköjään ryhmä nimeltään finnish food mutta ei juurikaan muita niinkuin ei muuallakaan somessa ole.. olisi jotenkin kiva ajatus saada porukka innostumaan enempi perinteisestä suomalaisesta ruuasta.

      @@punkkumies1283 Hassua että mainitsit! Porilainen on ollut kyllä mielessä. Makkaraperunat löytyy jo, ja myös ruishampurilainen. Lihapiirakka on kanssa ollut listalla jo pitkän aikaa, mutta sitä en ole vielä ehtinyt tekemään...

      So glad I just found your channel. I can’t wait to make this,your Finnish hole bread and cabbage rolls. I miss my grandma’s cooking. She made the best potato soup,fish stew and bread.

    Is this traditional for Christmas too? I wanted to make a nice coffee bread for Christmas Eve.

      It could be! It's usually not limited to holidays in Finland, but especially if it's not readily available I think it would fit the Christmas table very nicely.

    Could you use sourdough starter instead of yeast?

      That is an excellent question! I've been meaning to try it. I think you can, but I also think the texture may come out a little denser than with regular yeast. You can also let the dough proof longer in a fridge even you use yeast to get the same kind of results.

      Personally, no, but I've seen people put butter or even jam on top. I think it has enough butter as it is to give my cardiologist a heart attack.

    Pulla doesn't need an egg. It is just a habit of some people 😃

      I think egg has a purpose in the recipe. Since the dough has so much fat, it works as an emulsifier in it, binding the fat with the other liquids. It also adds elasticity in the dough, which then helps when shaping it.
      Not to say you couldn't omit it if you want to go vegan, or any other reason, but it does has a function and the results would be different.
