- Terry had a stellar birthday, I mean she got to work! We thought we should give her a gift, and knew that she wanted another enrober! Now we love our original enrober and she will still be in use, but we wanted to have another to dedicate to just milk chocolate. We took a step into the 21st century with a fancy new enrober from Perfect Choco! We took an entire video to the unboxing of this beast of a machine and hope that you'll come along with us into the next step in Hercule's Candies expanding future!

If you apply pressure to the mold while on the vibrator it will work much better the mold is too light
Joe, look up the mold number embossed/engraved on the mold and refer to the manufacturer website or catalog for the specific grams or ounces. You likely will have to convert to a decimal. Program each mold as a recipe-d for dark -m for milk chocolate and you should dispense correctly. Also, most vibrating tables allow for adjustments to the vibration strength. No more manual tapping or funnel for molds, it’s about efficiency. You u also may need to experiment with a different brand or chocolate or blending another chocolate to improve the fluidity for enrobing. Peters does not have the best success with enrobing. Just my .02
If they use different chocolate it won't taste the same and that would be a travesty!

new equipment takes time to learn. i used to work as a butcher, and when we upgraded our sausage stuffer it also took around a month to incorporate properly, and that was with a mashine we used daily.

@@sunfield34 they have always been successful, but on a lower pace, they've always sold out their candies and chocolate sweets, and even had interviews with tv local station, etc, however, when Craig wanted to show us all, what he was saying NO to everyday, because of his health, he went downstairs to the basement, and opened their door to the internet public, the rest is history. So all in all, this family sticks together, thick and thin, I so love them and am happy that business is booming with each and every video.

Your family has done an excellent job learning the new enrober. It reminds me of when I got my new sewing machine. My old one was manual everything. My new one has so many bells and whistles on it. Auto needle threader, stop/start, and some even have auto scissors. Glad to see all is going well for your family.
