Yeah, tis a bit odd. It seems like those sections that seem harder just so happen to be things he has more experience with, and maybe he struggles with the easier sections because of some ADD that prevents him from maintaining his composure?
It's all very assumed on my part, but it's also very comical the tragedy of his skewed skill set.

I love that he realizes that the Great Dog Bone is what is causing him trouble but then he immediately will get so mad about something else that he forgets to switch out.
It's so funny that he's constantly afraid despite making a build with the idea of bumrushing and smacking things with a big stick. He just cannot play aggressively and use the giant club to his advantage
One of my favorite things about this is when you cut back to his Crystal Sage battle in Dark Souls 3 and he immediately starts complaining about the forward and R1 move

It's so frustrating watching him get hit and lose 80% of his health, then he heals back to half health and then dies because he gets hit for 80% again. If you're going to heal, just top your health off. He is his own worst enemy.
