    We are a homesteading, homeschooling family of 7. Due to recent events (job loss/career change, health issues, rising food costs, etc.) we are having a hard time making ends meet despite our best efforts at frugality. So we are tapping into our local food banks to help us feed our family. Come along as I show you what we are blessed with, what we add to it via grocery store and garden, and how I use it all to nourish our bodies.

    Tortilla Chip Pie

    Drop Biscuits
    2 c flour
    4 tsp baking powder
    3/4 tsp salt
    2 tsp sugar
    5 tbsp softened butter
    3/4 c milk + 1 to 2 tbsp more if needed
    Mix dry ingredients well. Cut in butter till butter pieces are pea sized. Stir in mix. Mixture will be softer/wetter than regular biscuit dough. Drop by large spoonful onto a greased baking sheet.
    Bake at 450' for 12 minutes.
    Big Mac Sauce
    1/2 cup mayo
    2 tbsp ketchup
    2 tbsp dill pickle relish
    2 tsp mustard
    2tsp white vinegar
    1/2 tsp onion powder
    1/2 tsp paprika
    Artisan Bread
    3 c. Flour (white, wheat or a combo)
    1 tsp. Salt
    1/2 tsp. Yeast
    1 1/2 c. Water
    In a large bowl, mix together dry ingredients. Add water and mix till everything is wet. Cover bowl and let sit for 12 to 18 hours.
    Turn the dough out onto a floured surface. Form into a ball and place on a sheet of parchment paper. Allow to rest for 30 minutes.
    Meanwhile, preheat oven to 450°. Place Dutch oven with lid into oven and allow to get HOT.
    Carefully place the dough on the parchment paper into the hot pot. Cover with lid and bake for 30 minutes. The. Remove lid and bake for 15 minutes more.
    Remove from Dutch oven and cool on a wire rack.
    Bake in a loaf pan: 350° for 35 to 45 minutes.

    Pork loin roast cooks very fast in the crock pot. I used to cook them for 6 to 8 hrs and like you, wondered why it was always dry.....and then one day I was actually home whilst cooking one and at four hours decided to check on it and low and behold it was cooked and juicy 😀 so now I plan for my pork roasts to be in the crock pot for 4 hrs and they come out nice and juicy every time!

    I always add a can of cream of mushroom to keep the pork juicy. When it finishes in the crock pot the cream of mushroom is thin because of the juices are added to it. I like to take what is left and add a bit of flour and make gravy.

    Sorry you and your family are sick I hope you all get better soon. I'm just getting over something that I've been dealing with the whole week don't know what that was lol it's been chili and drizzly all week where I live we've also had some pretty massive flooding in some areas sure could use some prayers for some dryer weather.     All your meals look tasty this week. Hope you all feel better next week. It takes talent to burn water . LOL . I think you just need a down day for mom to rest . The kiddos can eat cereal for a day and survive. Feel better.Oh what was that that you made yourself on pizza night didn’t see a recipe for it .

      Yep. I forgot to add that.
      Chaffles
      1 cup shredded mozzarella
      2 tbsp almond flour
      2 tbsp egg whites (1 large egg worth)
      1/2 tsp xanthan gum (optional, makes them extra crispy)
      Makes 2 to 4 (depending on size of waffle maker and how thick you want them- thicker is less crispy).
      Place mixture in a well heated waffle maker. Cook for 4 minutes with out opening! Opening will result in sticking.
      To make the "pizza" flavored add 1 tsp Italian seasoning and 10 pepperoni diced

    It is so that you make your own pizza. The last time, my daughter and I went out for pizza. It cost us $26.00 for 2 small pizzas and 2 soft drinks. Have a wonderful weekend. God bless you and your family.

    Don’t over cook pork. My stepmom cooks it forever too and it’s always so tough! She’ll cook it on the stove and then cover it in sauce and put it in the oven for a couple hours…. I know no one wants trichinoses but as long as you get it to the right temperature it’ll be fine.

    Finally made your Big Mac Sauce. Omg it is so good. My son who doesn’t like burgers, has been asking for them and Big Mac sloppy joe. Add sauce to browned crumbled burger. Serve on a bun with lettuce tomatoes pickles onions and cheese.
    Love your honey mustard also.

    Try an oven bag in you slowcooker that should keep the juices in and keep it moist.

    Don’t put the pork on the onions put it on bottom of crock after searing and put onions on top. Allow it to cook on low in its juices and will not be as dry. I learned this the hard way 😂

    Pork is easy to over cook because of consistency it holds the heat and continues to cook after you take it off the heat. I have to use a meat thermometer and check it often and as soon as it reaches the right internal temp it's done

      @@weepingwillowhomestead I didn’t say it to be mean. It will affect your subscriber numbers. I am a university professor and I got the critique on one of my early lectures, I was saying ‘um’, otherwise I wouldn’t have known. What helped me was to slow down and take a breath. The um’s and likes are fillers and we all speak too fast anyway. Take a quick breath between sentences. Hopefully that will help.

      @@cinm9565I’m sorry but not nice to be critical. I have no problem with how she talks. She is an everyday normal mother . Not a snooty college professor. If you have an issue just move on and keep your comments to yourself .
