- In this video, I cook up a delicious Popeyes fried chicken sandwich out of the back of my truck. This is meant to show you how easy it is to make a finger lickin' sandwich in the safety of your own home or automobile.

2 Chicken breasts flattened to about an inch thick and cut to fit on buns
4 Brioche Buns
Breading -
1c Four
1/4 c Corn starch
1tbs each of onion powder, garlic powder, (paprika, Cayenne for spicy)
Brine
1 TBS MSG (optional sort of)
1c Buttermilk
1 tbs Salt and pepper
Sauce
1c Mayo
1/4c Hot sauce

haha so funny, such a comedian, I wish I could be like you one day.
Tip for frying chicken next time: Try battering the chicken twice. Meaning, dip it in the egg/milk (or whatever you are using), then cover it with flour/corn starch, and then repeat those two steps one more time. When I worked in a deli, this is how we fried all of our chicken and it came out to be SO AMAZING! Super crispy and delicious!

Well,considering your doing this out of your pickup not bad. First time I have watched you cook out of it I do see a few upgrade changes you could do to improve and simplify you're cooking area that would help. As to the cook I would suggest cutting the chicken breast in half by butterflying it. Making it half as this allowing it to fit better on the bread and giving you two sandwiches. Plus it will cook more quickly. Last do a double dip breading technique that you could have used when you fried your razor clams when you were in Washington state. First dredge the chicken ( or clams) in a straight flour. Then into a bowl with a egg wash, then into your mixed flour mixture and then finally into the skillet ( you mentioned the cast iron, yuppers it's worth digging them out. If you're carrying them in your truck, make it so you can easily reach them for use. Otherwise why are you carrying them in the truck?) Anyways, it was interesting. Have a great day. 😃👍🌤🐓🍳
