There were 6 of us girls and that was one of the first things Mom taught us when she was teaching us how to cook...NEVER EVER pour grease down the DRAIN!

I think the first one was coming from the gutters, so should of been clean water, but think someone had poured fat and oil into the drain

A piece of advice : lower the camera when the manhole is deep otherwise it's difficult to see and favour the width of the manhole so we can see the inlet and the outlet. (typo edited)

Are you able to get a gauze that would fit in the drain to catch the fat and stop it going into the sewer?

For Health reasons, its better going into the sewer rather some ones bin

Fat going into the drain is quite liquid, so the gauze would not stop it. As it goes further into the system it cools and causes the problem. Also everything else that goes down the drains that should't be in there (eg wet wipes) will just clog the gauze and cause more problems!
As has been said - don't put fat into the drain.
