Szeged goulash - a healthy and very tasty meal on a spoon

  • Szeged's goulash, a delicious dish made from sauerkraut, pork and spices, originates from neighboring Hungary, although it is also very popular in Slovenia. It is especially popular in the colder months, when we like to reach for spoonfuls and barrels of dishes that become even better when heated.
    In the oldest Slovenian cookbooks, Segedin is found under the recipe for goulash with sauerkraut, and somewhat later, the terms Segedin goulash and Segedinar are already used. Many people mistakenly think that the name comes from the Hungarian city of Szeged, but this city has nothing to do with this dish.
    All recipes for goulash with sauerkraut are very similar, the differences are in added spices and additives.
    As I already mentioned, the dish originally comes from the neighboring country of Hungary, but it is not known by that name there, but in Hungary it is called székelykáposzta - Szekely's cabbage.
    And how should Szeged goulash be made?
    Jozsef Szekely was a Hungarian writer and journalist and the story of the origin of the dish says that he once went to a pub with a friend and they wanted to eat something.
    The chef only had leftovers and mixed pork goulash and boiled sauerkraut and that's how the dish was created, which we call Szegedin or Szegedin goulash.
    Due to the high content of vitamin C, sauerkraut can contribute to the resistance of the immune system, and vitamin C is crucial for the formation of collagen, which plays an important role in the health of the skin, bones, cartilage and blood vessels.
    The fiber in sauerkraut can help regulate blood sugar levels. Fiber slows the absorption of glucose, which can be beneficial for people with diabetes or those who want to manage their blood sugar levels.
