      If you make it with oxygen you're going to make more vinegar than alcohol. (: I mean some people might like that and I'm sure it has its uses, but the anaerobic doesn't have ascetic acid--rather only a small amount of alcohol.

    I learned to make kvass the first time from a guy in Russia he's a CZcamsr like you his channel is got great content but i will warn you he's funny but there's a lot of PG-13+ most of the time and bit of Russian foul language but some is gamer content. But i like his cooking and brewing. his channel is life of Boris. I use extra dark German pumpernickel. The ingredients are very minimal whole kernel rye, water, whole rye flour,salt, yeast,malt extract. It's great bread a bit high for only 7 slices of bread but worth it cuz i only buy it to make kvass and that makes me 3.5gal of it i have this stuff on tap here i absolutely fallin in love with this drink. I have one glass a day. Opa! Is it ever good 👍☺️ thanks for making this video I'm trying it ur way this time i can't wait I'm going to do something to speed my breads drying up I'm going to put it in my dehydrator cuz i just got this loaf today.

    Where do I start... Love learning from all your videos, I don't always stick to the recipe, but the information you give allows me to try making things I've never made before. However; Kvass is something I've made before (once) and was a disaster. I'm English and my girlfriend is from the Ukraine - I know what you are thinking, she must know how to make Kvass... nope, not a chance and she would laugh reading this. I made your recipe and she tried it and she stole the whole jar and likely never to get it back))). She was so impressed that she has passed the recipe for her mum to try (her mum makes great Kvass I'm told) because she liked the idea of no added sugar. It is delicious - left mine only 3 days and it had a ph level 3.0, which it attained pretty quick. I have a second jar fermenting now which I will leave for 5 days and check the ph level, looking for a 2.0-2.5. I make it not only for the taste, but also the probiotic value. Thank you for a great, very easy to make recipe.

    I made kvass with raisins and lemons, then cranberries, now mango and honey etc. You can make it diff. Ways with diff breads and yeast too. Very tasty BLYAT

    I drank kvass for years in Eastern Europe but have never made it. I’ll try it soon as I can’t get it here in the ME. I agree with using spring water for all ferments, too….also for all drinking!

    Hi! Swing top bottles are fine for carbonated beverages as long as you get ones from a homebrew shop or reuse ones that some brands of beer are sold in because the glass is strong enough to withstand the pressure. Don't trust ones from places like Target or a home goods store because those are likely just decorative and not strong enough.
    Wild yeast you find on apples can be hit or miss, do you think it would be worth it to throw in a couple organic grapes or other fruits to get a good variety of wild yeast?

Nearly done reading The 12 The Most Eligible Bachelors series again. In the middle of the second to last one. Then I'll read Fern Michael's Sisterhood series again which is my first most favorite series. It's been a long time since I read both so it's a good refresh of those stories.

    Nie znalazłem cukru i drożdży w składzie. To dobrze. Widziałem wiele receptur tego starodawnego, średniowiecznego napoju z użyciem rafinowanego cukru i drożdży, które zaczęto produkować w XX wieku. To dobrze, że pani nie używa tych przemysłowych składników.

    You can get really interesting drink, when water is 1st used to cook spruce branches. Idealy young, light green, but you can use even older and small branches with bark on. Filter water to get kind of “tea”... let it cool down to temperature not to kill bacteria (under 53*C which is 140*F imho), than use that “tea” as water was used in video. Not for everybody, but ... Frontier Beer style of beverage.

    Thanks Mary. I’ve been taking my beet kvass on a little trip every night. I had to put it in the fridge prematurely because it started to develop kahm yeast in my hot kitchen. So every night, I take it out of the fridge and put it in my bedroom which is air conditioned.

      Sometimes I get kahm yeast on my ferments. It doesn't hurt anything. I don't remove it until the ferment is complete because it just comes back. I leave it at room temperature (anything between 65 and 80 F at my house), and remove the yeast when the ferment is done. Then refrigerate.

    Marry you are amazing, thanks for the detailed description. I want to be sure that I am producing a non alcoholic beverage, is there anyway I can make sure of that or is there starter cultures I need to buy?

      You can use bakery yeast, brewery yeast,... dont put a lot of it in there. 1st : its really fast reaction, few hours in 21-25*C, kind of explosive (i do suggest to use bottle (jar) with hole in, putty supported hose from silicon, ending in jar with water, so co2 can go out, but water will not allow anything go in...) 2nd: yeast tend to change taste of kvas. Too much of it will cause it taste like ... yeast.

      Btw kvac/kvas is allways alcoholic. You can get a rid of alcohol and it is different when fermenting aerobic or anaerobic. Temperature while fermenting and amount of shuger does matter too. But expect it to have 2-7% vol.; really depends. Better not drink it while driving or so.

    Mary,
    I really want to try fermenting, but I have read and heard you will need to refrigerate once it comes to were you want it. Does it mean, you could only have a couple or a few things fermenting. I know I could not afford a second or third refrigerator (money and room) just for fermentation. I also think about, when you have a harvest of garden things you could really not persevere much. I know people fermented in days gone by, as a way of persevering,, but they didn't have a refrigerator either and not everyone had a root celler. So what did they do with their fermentations? Sorry for the long question it's just that I thing about starting and then stop. I for one want more than one jar of pickes and such for the year. Lol Help if you can.
    Oh btw I love your channel it is very informative and I have used your recipes and they have come out wonderful. Thank you for doing this. I have tired your kombucha and sourdough, kifer and more.

    Btw by anaerobic fermentation one is heading to alcohol (ethanol) aerobic is heading to vinegar.

    Raisins are used not only for its shugar content, but imho mainly because it tends to supress molds to grow because of complex chemistry of (not only) antioxidants. Eg cramberries marmelades basically cannot get mold even opened and partially eaten from jar. This is kind of same... i would be kind of afraid to use cramberries in fermentations, becaue Im not sure if it will not kill even wanted bacteria, though. Lets try.

    Hi Mary! I just bought beets at the farmers market the other day to try beet kvass, now I want to make this too and I haven't even started on the beet one :) Thanks for this! PS this is a funny question but... I've always wondered why you have two coffee makers in the back there? Lol

During the quarantine, I have had a full house so I have needed to have plenty of coffee brewing in the morning to keep everyone happy! LOL!! But as things slowly get back to normal, I am thinking of keeping them as is...one decaf for my sweet husband...and one full strength for me! Love, Mary

    I made your Kvass recipe. I enjoyed it, however it was not effervescent. What would inhibit the effervescence. Thank you!

    Its better to have hole in lid or bottle stopper with silicon hose through (sealed by something like putty or glue), and put that into bottle (jar) with water in the way, water will not return back to kvas... it will allow CO2 to go out of kvas and even oxigen is put away. Than you will get an-airobic fermentation + you do not need to be afraid of explosive effects. But to shake jar is kind of more difficoult.
    There are special bottle stoppers for fermentation available too, but this hose hack is good enough, usually (its not good in case of pressure chabe outside, because water could go to kvas and destroy it, but works well otherwise)

    Mary, assuming that I won't be re-using the solids, should I squeeze the liquid out of them into the kvass before discarding the solids?

      Hi Miriam, That’s a great question. Yes, you can squeeze the solids to get every bit of liquid out, however, if you do that I would recommend straining it through some cheese cloth or a flour sack towel to prevent the kvass from becoming too cloudy. Love, Mary❤️😘❤️

    Okay, so a friend's son was selling his mother's homemade squash bread made from sourdough to raise money for his brother's Church camp. Such a sweet idea! I bought some and have eaten about half of it but the other half is starting to not taste very sweet so I'm wondering if maybe the good bacteria is still eating up the sugars. The last piece I had I drizzled honey over and sprinkled some cinnamon and that helped. It doesn't taste like it has spoiled or gotten moldy or anything. I remembered about the Kvass recipe and wondered if this squash sourdough bread could be used to make the Kvass. I will probably try it but I wondered if you had any words of wisdom to offer me? I would still like to try it even if this doesn't work out. I can't make my own homemade bread due to lack of an oven so would store-bought work if it was good quality?

    I just made sourdough rye bread. My starter is strong, the bread came out good, but I over-fermented the dough and it didn't rise much. Can I use this bread for making kvaas?

      The amount of alcohol is negligible.

      You really have to experiment to find how you like yours. As for the wine, it’s the same first step, but wine goes through many more steps that give it the alcohol content because of the bacteria and yeasts involved. Unless you have an alcohol allergy, you probably won’t even notice (that’s if there even is any in yours.)

      It's on the raisins and fruit. Probably some on the bread if it's been sitting out as well, since wild yeast is in the air like mold is. It takes a bit longer to get fermenting with wild yeast than with store bought yeast but healthier for probiotics. You can get the next batch going fast though by taking some bread from the first batch and adding it as a starter for the next.

    Why kvass all of the sudden have fruit? It needed bread and east and molasses only but it’s nice to try anyways and I would call it hybrid probiotic-kvass

    NOT the usual kind of question, but do you know any quick-acting air deodorant? My best friend had colon cancer, and now has a colostomy bag. When it leaks, it's really stinky. Doesn't happen often, he is very careful, but every once in a while, I need something to cover the odor. The chemical ones irritate my asthma., and it makes him feel bad when I gag over the odor. He can't help it, and I don't get bothered except when it leaks. Any natural fast air deodorant would be very welcome! *Fast meaning a minute or so to work
    Edit: this wasn't a joke, I was the one who took my very best friend to the ER the night he was bleeding, and for the tests that said he had early stages of colon cancer. I was there for him as much as he allowed me to be, and then some. I learned how to take care of his stoma after all the chemo and radiation and surgery. I just have never adjusted to the smell of a leak. I know on the rare occasion he has a leak, he is pretty self conscious. If you know any recipe for quick odor control, I know we would both be very grateful! I have been up for nearly half the night worrying someone would think I was joking, or worse. So I came back to edit this. Maybe now I can go back to bed ans sleep a bit longer.

      Hi Catherine, I understand completely. I have found that mixing some essential oils in water and giving it a good shake in a spray bottle can help eliminate odors. Hope it works fast enough though. Maybe other here will have some great ideas. Love, Mary❤️🤗❤️

      I have had very good success by setting a bowl of white vinegar (maybe half a cup) somewhere in the room for a few hours (or even two bowls if you are desperate). Works on many kinds of odors, but I haven't tried it with your circumstances. Afterwards, the room does smell like vinegar for maybe 15 minutes, but to me that is a small price to pay. I understand this strategy is used by hotel housekeeping staff when they encounter an odorous problem.

      It's organic & help not only for smell but also kills bacteria.
      You can also add tea tree oil in it.

      Great question! When it comes to Olive Oil, rub a bit between your hands then smell them. If you can smell that rich olive aroma, you have real olive oil. If you don't detect much aroma, chances are your olive oil has been "cut" (diluted) with a cheaper oil. Love, Mary

    32 minutes of bla, bla, bla and you don't even show straining it or the finished product. Almost 10 minutes before you even start making anything. Thank God for the skip feature. I skimmed this entire thing in about 60 seconds and realized that watching it would be an epic waste of my time. That and the moment I seen apples I realized this was not a true Russian or Ukrainian kvass recipe. True kvass uses black bread, much darker than you show here, and raisins. That is all. Uzvar is made with apples and smoked plums, not kvass.
    Perhaps you should stick to bland English food instead, and maybe you can even fit that in under 30 minutes.
