I had participated in this Internship Program in Israel way back in 2010 and got to know and made frieds with the Thai residents/workers there. Man, I still remember the time when they invited me to eat with them one time and Pad Gaprao was one of the dishes that won me that time. Spicy, slight herbal flavor from the Holy basil and a wee bit of sweetness from the oyster sauce and sugar. So good!
WOW! I thought this was more complicated and way too many ingredients involved. But this is so easy! Love it! Thankfully I have Asian Grocers that carry the Gaprow Basil.
You need to add some salt , white pepper and MSG it’s a savory dish so don’t add sugar ..
Such a delicious meal. I just MOVED to Thailand today (wife had already move here, it's my 4th time in the country now), and it was my first dish coming back! LOVE it... I've been a chef since I was 18 (20 years ago that is!) and as a westerner... I don't feel like I can compete with thai food - it's above everything, the combination of savoury, sweet, spicy, umami - its ALL of the things we love. Marion, can I be your intern?

My wife ( Thai) who loves spicy food had her first taste of serious heat tonight after I put ghost peppers in her thai food. Let's just say she thinks I'm nuts and was probably born in the wrong country (USA). She was on fire for an hour or so. I was cracking up. She calls her mom and sister in Hua Hin, tells them what happens, and they're laughing because this American guy can take the heat better than his Thai wife. Priceless.

Wow! I grew this Basil without even knowing it!!! You can get it in Rockford, Illinois in the early summer at a place called Village Green! I also enjoy growing the purple Basil as well. Basil is just fun to grow! 🙂🙂🙂

I’ve been making this for years, but I was taught with chicken. I think because chicken was cheaper then pork or beef. I minced the meat myself in my food processor.
Having spent years in Thailand I had many favorite dishes; first phad Thai, then yum som oo, then som tom… but eventually I realised it’s pad kapow moo FULL STOP.

I know it's not the done thing in Thai dishes, but I've tried cooking the mince through to properly browned and thought it was better than the "just cooked through" that is typical for these.
Great idea, more flavour. The Thai dish Yum Woon Sen also uses crispy browned pork mince, a delicious dish to make 🍲
Looks so good!! You can find holy basil in many Indian stores - Indians use it in their food/Hindu religious practices. It’s called Tulsi.

Holy basil grows so well in FNQ I had friends who have hooked up with some expats originally from Bangkok.
It’s wild how different holy basil is even compared to “holy basil” which is usually a hybrid of some kind when found in Australia
I totally agree. I’ve found ‘holy basil’ here in Australia but it tastes completely different to the variety in Thailand
Interesting, I found & was growing Holy Basil in Qld & we all didn’t think much of the flavour. I guess I wasn’t growing the right one!
We Love Thai Basil so was wondering why the Holy Basil sucked so much 🤣 (It did look the same as the HB shown)

Indian grocers carry holy basil!
In India you will find the Holy Basil in every Hindu’s house . We do not cook the herb in our food but have religious rituals with the Holy Basil.
I dont understand, why the egg is cooked first? it will cool down and wrinkle.. it is only few sec to cook it in the end before serving ? :))
My (Asian) family has always cooked the egg first using the same wok to cook the rest of the meal. This way, only one pan (or our case, a wok) to clean. The residual oil in the wok is enough for the stir fry. If you don't mind washing another pan, of course you can cook the egg separately right after the stir fry. However, since we were a big family and each person got an egg, regardless if we cooked it before or after the stir fry, the eggs would have gotten wrinkly..at least that's our reasoning.
@@wilbursabastiansasmallbist9170 I totally get that and probably wrongly I think the fried egg is not that good if cooked first then cools while the whole meal is cooked in a wok. The way I would do it is once I serve everything thats in the wok I`d fry the eggs in the same pan. Again probably I am wrong but I was curious to find out why they do it . ☺
ide just use two woks one for the eggs and one for everything else, amd then i would time it so ot was done at the same time so the whole dish was warm and not just some of it. Thats how i do mine anyway

No soy? I'm so confused by the many recipes for this dish lol. but I will try your version without the soy this weekend. I have no joy finding Thai basil in my bit of the UK.
update: So, I've made this now - but no holy basil. Interesting. I liked the heat, and the sauce without soy was interesting. Not bad, but I guess this must be a traditional recipe. For a western, perhaps sophisticated palate, this dish is somewhat too salty. I'm not someone who salts before tasting, but that does not mean I don't like salt. This is pretty salty. I say traditional recipe, as often in European peasant dishes, and similar levels of other cultures, salt and spice are used to disguise poor, or just going rotten, cuts of meat.
I was fascinated by not using soy, as every other recipe uses soy (sometimes dark, sometimes not) e.g. 1 tbs oyster, 1 tbs soy, 1 teaspoon dark soy, and many have 1tbs fish sauce, but I find perhaps half a tablespoon to three quarters gives a better balance.
I don't normally crush the garlic or chilli, but will from now on. A bit of fun, and I get the effect it has. So, I will play around with sauce combo without soy, and see if I can get a different balance. Thank you.

Number of cannabis shops in Thailand was ridiculous when I visited recently, in any built up area there's usually one within your line of sight
I love this dish so much! I use one of your older recepies when I make it for my self. But very often when I visit Thailand and order Pad Grapow I get it with big chunks of meat (most of the time chicken) instead of minced meat. Do I have to say something else? I have the feeling not many restaurants use minced meat anymore :(
