Ingredients
3 cup Almonds(Badam)
2 + 2 tbsp Ghee
1/2 cup Milk
2 number Saffron
3 cup Sugar
as required Yellow food color
Directions
• 1. Soak almond/badam for 2-3 hours (suitable if soaked overnight) & peel off the skin before preparing this dish or boil them for 30 mins incase of last minute preparation. 2.Put the peeled almonds in a blender and add milk to it .It should be enough to cover them . 3.Blend it into a coarse paste .Avoid thin texture of paste due to excess of milk. 4. Heat the pan & add 2 tbsp ghee to it .As ghee melts add badam mixture & give a quick stir. 5. Add sugar keeping in mind 1:1 ratio of almond : sugar (more sugar can be added as per taste) Alternative Tip:- dilute the sugar by making sugar syrup & then adding it to the badam mixture. 6.Constantly stir the mixture as it can stick & burn from bottom. 7. Add Saffron & constantly stir as it boils from bottom.(Food color is optional if required) 8. Add additional tbsp of ghee while its boiling.Constant stirring is a must till ghee starts oozing out. 9. Once halwa separates out ghee its time to put it in a container & is ready to be served. 10. Garnish it with grated almonds/badam

I just made this! The most delicious! I used almost 3x the ghee. It's richer and used less than half the sugar. I rolled it into balls after cooling. This is how it was served to me the first time. This is one of my favorite deserts of all time.

I cooked some last week . In my case ...I browned the blended badam with a pinch of elaichi .... then added it later when the milk come to boil......
.bt this method seems easier....so have to try it. Thanks for the learning opportunity Chef!

@leylitalove I think u misheard. He said "Ghee" i.e. Clarified butter or unsalted butter . Kheer is a complete different desert ... it is not used in here . I hope now u understood . :)

Spread evenly in the tray and let cool to solidify. Then cut into serving sized cubes, square or rectangular. Lastly, slowly savour the rich and luxurious badam halwa.

yummm..... Am making this today. Indian sweets have to be made with ghee. Dont substitute it with olive oil, it wil taste yuck like grease. If you are worried about the calories , make it in small quantity. And the taste of badam only gets enhanced by the saffron and elaichi. Its a sweet dish, for God's sake.!!!! Thx Sanjay! I did in a hard based aluminium kadai,but as did by you the halwa didn't come soft. At one stage I become tired and stopped. Also you didn't mention whether to keep the burner in slow or medium or high.
