    Kala mutton is an iconic mutton delicacy of Maharashtra and also popularly known as kala ghost. Though it would takes time to prepare kala mutton curry recipe, with this slow cooking, we can achieve the traditional dark brown color. This also produces succulent mutton pieces with the deep flavor of spices.
    Ingredients list
    Mutton - 1 kg
    Garlic - 15 cloves
    Ginger (chopped) - 3 inch
    Coriander leaves with stem - 1/3 cup
    Turmeric powder - 1/2 tsp
    Curd - 1/3 cup
    Salt - 2/3 tsp
    Mustard oil - 3 tbsp
    Onion (slit) - 5 nos
    Dry coconut - 1/2 portion
    Green chilli - 7 nos
    Red chilli powder - 1 tbsp
    Hot water - 500 ml
    Salt - to taste
    Coriander seeds - 2 tbsp
    Bay leaf - 2 nos
    Black peppercorn - 8 nos
    Dry red chilli - 4 nos
    Clove - 4 nos
    Star anise - 1 no
    Black cardamom - 1 no
    Cinnamon - 1 inch
    Mace - 1 no
    Clarified butter (ghee) - 1 tbsp
    Cooking steps
    1. Put Garlic, ginger, coriander leaves with stem and water in a mixer grinder and make a paste.
    2. Put mutton in a bowl, add Garlic, ginger, coriander leaves paste, turmeric powder, salt, and yogurt, mix and set aside to marinate for 60 minutes.
    Step 2
    3. Put whole onion on a grill and char from all sides on direct flame.
    4. Put whole dry coconut on a grill and char from all sides on direct flame.
    5. Put green chilli on a grill and char from all sides on direct flame.
    6. Roughly chopped charred onion, dry coconut 7 green chilli and put in a Mixer grinder and make a paste.
    7. Take oil in a pan and Put marinated mutton on hot oil. Add charred masala paste in pan.
    8. Mix well and add hot water
    9. Cover and cook on medium to low heat until mutton cooked properly.
    10. For tempering, take coriander seed, bay leaf, black pepper corn, dry red chilli, clove, star anise, black cardamom, cinnamon and mace in a hot pan, toast on low heat un till aromatic.
    11. Then put in a mixer grinder and make a powder.
    12. Add toasted masala powder and clarified butter in mutton, mix well.
    13. Serve hot with rice or roti..
