Thanks Stacy , I'm making dilly beans and elderberry syrup for this winter's stockpile while watching your video. Also just taught my 4 year old grandson how to dry catnip for his cats to enjoy this winter. I'm 76 and my husband is 83. we have been gardening for over 50 years and guess what! the other day a young girl came to the house and asked me if I would teach her how to homestead. she and her family moved here to Ohio from texas and wants to know how to grow a garden in this climate. I am thrilled to help her and I am helping other girls who are very interested in learning homesteading skills.I know this is exactly what Jesus wants us to do. OH MY GOODNESS!! Thank you SO much Stacy! My Grandmother was born in 1906 and went through the Great Depression. I still have all of her canning essentials. I just found you and Doug about six months ago. Thank you so very much for all of the information. I’m in Northern CA. I live in town but have a good size garden on my patio. I’m blessed with my Grandmothers green thumb and being in my garden is my therapy.

I learned about this from Carolyn at Homesteading family and after it's fermented, you can also throw it in a blender if you don't like it chunky, that's what we do. Thanks for sharing!!

Like, share, tomatoes, basic, salt and garlic! I got this, Stacy. Questions: I'm getting ready to buy a bulk order of salt! I need to know, are you using "fine" or "coarse" or "kosher" salt for the ferments? 2) Do you need to "burp" the jars over the course of 3-4 days or use a mason top and let it burp itself until its ready for permanent storage? 3) What do you consider the minimum temp for cold storage in a cellar or cool dark place? 4) How long will the tomato sauce last in cold storage? Am I making to use in the short term in a month or will it last and remain tasty good in 6 months or a year? More? God bless you and Doug, keep speaking the truth! ❣

I can remember roller skating at the big indoor rink, an hour from my small town, back in 1978!! Last weekend, I taught myself to can! I started with tomatoes and strawberry jam.😃
I did not realize how noisy homesteading is. I always imagined a quiet, peaceful environment. I do enjoy hearing a rooster crow instead a busy traffic and electronics. Thanks for some new preservation ideas, if my maters ever ripen, I’ll be trying your suggested method. I am trying to grow and preserve as much as possible while watching my 18 month granddaughter, Family first!
Roosters are nothing!!! The hens "sing" their "egg song" when laying an egg. My Rhode Island Red is LOUD! And ofcourse the roosters join in! Its LOUD! lol
My neighbor had mating pigs for awhile 🐷 ! That was crazy! The rooster I had crowed all day long too. Yep, very noisy but wonderful.

It’s easier than you think
I made this Sunday night, refrigerated it Tuesday night, and then we had it for supper tonight, Wednesday. I’ve tried over the years to ferment tomatoes and this was the first time we all called it a great success. Going to repeat all summer! We have seven kids so I used a gallon jar. We’ve grown 460lbs of tomatoes so far this year. I’m thrilled to have this delicious easy option. While the pasta was draining, I heated olive oil, pressed garlic until aromatic, then the fermented tomatoes. Returned the pasta into the sauce and it tasted like a great marinara sauce. Looking forward to receiving your fermentation cookbook in the mail any day now.
CCR is my go to music when I’m working. My kids used to not come in the house when they heard Credence because they knew I was cleaning. When they were grown, my daughter brought this up and told me she avoided the house. I already knew that. I told her that what she didn’t know was when I needed quiet time from 3 teens, I’d play CCR and relax. 😂😂😂 Mom is smarter than they thought. This looks delicious btw. Many Blessings!

Haha same for me! I planted basil first of the year and I shouted BASIL when she picked it from the garden. Hilarious huh! But fun to learn new things. A year and a half ago I couldn't keep a houseplant alive. Now I'm growing and harvesting from my vegetable container garden!! Happy gardening! ❣️❣️

I helped out two neighbors with jarring tomatoes , when I look back at all the hard work and nothing. Back for my hard labor, her exuse to me for not sharing her tomatoes- not Sure how true What she said....but if that ever happened to me...ID NEVER JAR AGAIN.

@@Romasulmona I think they just didn't want to share. Tomatoes are high acid and usually last a long time. You can always store without ring and if they go bad the lid will pop off. Also never store them with jars on top of each other otherwise when go bad you won't know it because it is like having the ring on.

1) What if the juice doesn’t cover the tomatoes?…do you put in one of those masontop pickle pebbles?
2) Does the jar need to be burped?
3) If using from cold storage, how to heat up sauce so probiotics won’t die?

I don't think she heats it up. She just adds it to the pasta while the pasta is hot. I was wondering about "burping" it too and how long it's good in storage.

Hey Stacy, How long can you store this ferment in a cool location. How cool or can they be stored in a refrigerator and what temp for the refrigerator and how long? Thank you for all you and Doug share wishing you both an awesome day
They don't have air conditioning so in that case many use a root cellar or similar place where temps maintain around 55F.
I'm in an RV and ambient temperatures are around 80 to 85 so I'd expect it not to last more than a few months here.
I do keep lemons & limes in a salt packed jar on the shelf. About 6 mos later they've softened but are still quite good. Tomatoes are also a high acid fruit & I would expect to be ok if kept under the brine. I have peppers that have been fermenting for years. After a few weeks they no longer produce co2 so no need to burp the jar.

@@c-p1976 with enough salt, foods last a very long time but I have only done it with lemons & limes so I don't know about tomatoes for sure.

I couldn’t garden this year because I had foot surgery. So, I bought a lot of fresh sweet corn at the Farmer’s Market this morning. Now, I’m blanching it to put in the freezer. My chickens enjoyed helping me shuck all the corn. I’m doing tomatoes this week.
Stacy two things. I was so scared to eat this. It’s day 3. I made some capellini and added butter and cheese. I ran the sauce through a food processor to get the flavors mixed and topped over pasta. It tastes amazing. I am hoping I did everything right and I won’t get sick! Two I received your fermenting book today and saw the message! Thank you so much for the personalization! Tomatoes are my favorite to can. We can stewed, tomato soup, salsa, bruschetta, & marinara, plus some marinated tomato, cucumber, onion salad. We are always trying new recipes and I love this fermenting recipe (can’t wait to try it!). I left the med field and became a health coach, focusing on digestive health so fermenting is a big part of my life.
Saturday I’m going to look at a home w 22 acres a pond on the land a great home that is well , septic and has geothermal heating. About as close to off grid I guess that I can find in the north east lol pls pray we get this home ! I watch you guys and ache to live self sufficiently and grow our food and live in peace 🙏🏻🙏🏻
Learning so much through your videos, taking notes and wishing my school years had included this information. 28 years old and I'm having to teach myself and my children all the important life skills that the government schools conveniently didn't teach. Thank goodness I didn't regularly attend school till I was in the 4th grade, I missed a lot of the behavior programing. Still could have graduated a year ahead of schedule and wish I had skipped senior year it was the biggest waste of time.
Love this channel! Growing heirloom tomatoes on my tiny back balcony, myself. Don't think you're unable to grow your own food just bc you might live in an apartment. I bought cloth planters (you can use old baskets and purses) as not to add too much weight on my balcony. Would love nothing more than to have land and a large garden but I'm making the best of what I currently have. Thanks so much for all you do, Stacy and Doug! I am handicapped, and I have a back porch where I do container gardening. I am astounded by the amount of food I can grow by using succession planting. I planted potatoes 4 different times. As I harvest one group, I get empty grow bags and put in something else after amending the soil. Some of what I plant are perennials, and others are annuals. I look forward to the days when my kitchen is steamy from the canning, and my back porch is green from the growing. How wonderful is it to be blessed with such bounty!
I just made your pickle recipe the other day with the fermenting dill pickles so I’m going to try a couple of jars of the tomatoes as well I’m interested in knowing how long they will keep in storage.

I have made a "fresh tomato sauce" similar to this. Same ingredients (salt to taste), lots of basil, but you add a little olive oil too. Let it sit on the counter all day long to let flavors meld. Then serve it over buttered pasta. It's so delicious. KC and the Sunshine Band -- yes! I like classic 70s rock. Or James Taylor.

@@Chopperdoll I used half a jar today and will refrigerate the rest. I fermented it for 3 days in a dark room, burped it on the 2nd and 3rd day.
What is the shelf or refrigerator life? We just freeze ours.. but I have so many pint jars that I want to give this a try.. but no fresh basil..

I would think those double lids would make everything explode after a couple of days. Bizarre she didn’t mention burping. Way too much salt too.
@@beverlybrake you’ll know if somethings wrong. The smell won’t be right. There’s a difference between a fermentation smell and a rotting smell.
Oh, wow! So, we could add Basil and Oregano to make it more like a Spaghetti Sauce. I'd have to puree it before using it. I was just diagnosed with Diverticulitis. No seeds for me. Also, just asked Heidi over at Rain Country about making tomato vinegar. Can't wait to try these!
Your doctor is giving you WAY outdated information about diverticulitis!!! Way old!!! What research has now discovered just in the past 10 years is that diverticulitis is caused and aggravated by the gut biome being out of balance, not nuts and seeds. (They feel that much of it has to do with an overuse of antibiotics.) As soon as I found that out, I started lactofermenting foods and when I feel it coming on, several servings of a lactofermented food or beverage, like kefir or kombucha, and that restores the gut biome balance. I haven't had to take the cipro/Flagyl evil mess in almost 10 years now.
There's plenty of research out there, and if your doctor doesn't care to read it, then you can!
@@joannathesinger770 Thank you! I've been researching it and the info is all over the place. My mother had it and, if she'd lived, was told part of her colon would be removed. My oldest daughter has it, too. What she eats that bothers her does not bother me. I kinda had a little freak-out because my VA doctor told me to go to the ER. He said he suspected it was diverticulitis or my appendix. I'm of the opinion that fermented food will help me. I'll have to ease into it, especially since I am on an antibiotic right now. I usually eat plain Greek Yogurt and honey for several days after I'm finished with the antibiotic. If we can ever get to where we are more self sufficient, I am certain our health will improve. It's just an uphill battle for now, with lots of rocks!

I had to laugh when you asked our favorite thing to process from our gardens! My garden is 3 grow bags on a tiny balcony in my apartment. That pretty much fills up my space for growing! I have 2 cherry tomato plants in 1 grow bag, I just planted some radishes in another and some carrots in another. The results of those are yet to be seen! All my herbs I started from seed and they just have not grown very well in the pots I have them in so the only harvesting I have done is a small amount of peppermint, sage, and parsley. The rest are way too tiny to even begin harvesting from. Sigh. Someday.....!!! Thanks for showing us so I can pretend to be a gardener/farmer too!!!

Gardening on a balcony. Also, do you have a friend w/ more space? Or an elderly friend w/ space that can’t garden anymore? You can share the work and bounty.
And don’t give up! Gardening is something you do , you are successful in some things and fail in others. It is a learning process. We are just learning, too! If I ever had to grow one thing okra is the easiest for me! It’s fool proof and needs little water! I had a better year this year w/ squash! My green beans got rust that they never got b4! My watermelons were all eaten by something. We moved from the city to the country so we are dealing w/ more critters and more bugs it seems! Good luck!!
Danielle your making a start. Seriously it all starts with good dirt, if your using potting mix alone add some fertiliser pellets and blood and bone. Also terracotta pots/ ceramic pots look great but they steal the water from your plants. I learnt the hard way. I had lots of failed plantings. Still do to be honest but get some success now

How easy! I can remember garlic, basil, tomatoes and salt (4tsp). I've only fermented cabbage (saurkraut). You've taught me a new one to try!

Years ago I used to keep a garden. I never canned. We used to share the abundant harvests w/ friends, family, and neighbors. You have inspired me to do so again! I plan on using this recipe to ferment some tomatoes. Thank you to both you and Doug for all the helpful videos that you share!
I Started learning about fermenting several months ago when I was trying to figure out what to do with small batches of tomatoes and other veggies as they started ripening faster than they could be eaten.
Had a long cold spring in the PNW, and got my tomatoes in late! They're catching up now with all our hot weather! Can't wait till they are ripe so I can try this! Thanks Stacey!

It is AWESOME! I did cut mine smaller & removed skins & some seeds for my dad, who has diverticulitis. Those are the parts that contain lectins that are bad for that

I will try this when our tomatoes are ready as well as fermenting cabbage. I've got all the jars, etc. but haven't tried it yet. I'll be honest though, I am very afraid of not doing it correctly and getting ill. I purchased Redmond salt from the health food store and love it! As always, big thank you Stacy!

@@missb6371 I’m very intimidated by the whole process. Kind of nervous and excited 😆! It’s definitely a learning process. I’m just starting it all myself. I want what’s best for my family so I’ll have trial and error I’m sure but there no better time to learn then now! Love this! As it’s winter here in Australia I’ve recently made a big batch of kimchi, pickled beetroot, mustard pickles and jalapeño sweet sauce. I’m so looking forward to spring and summer here. We have the best of both worlds where we live… mostly mild winter days with some frosts and close enough to the high country where there is snow some of the time, and close enough to the ocean should we desire a salty fix… I much prefer the Aussie bush ( which is much like your area when it’s in the warmer seasons) to the coastal life though. Nothing beats a dip in the nearby river or sunrise on our mountain property with friends and a glass of wine, during the warmer months.I’d love to see you do a ferment with honey. Thanks for helping us Stacy! I just made 8 pints and added onions to mine! Unfortunately, I have had 3 surgeries since last Oct. and haven't had use of my arms much. I bought tomatoes at our local farmer's market. I got my tomatoes planted late and the seed didn't come up, so I just planted more and am hoping to get some harvested before winter here in northern IL.
Just bought your fermenting book and love it! I've tried 4 recipes so far and they all came out perfect! Its simple easy to use, well thought out! Thank you! I will definitely try this tomato recipe when my tomatoes are ready 😋
