We fight, we argue, we reconsider and most of all we learn to agree to disagree in many areas of life together. For us its one key to a long lasting healthy relationship. Age gap is not a big issue for us, Shes very matured in many areas of life. Speak very good English and a very understanding jolly woman, one of a kind.
My story about how I ended up retiring in the Philippines. How I met my beautiful Filipino wife and was finally able to move to the beautiful province of Biliran. How Rosemarie (my wife) runs our small hobby farm. Together we will cover many topics about living in the Philippines from a typical everyday life prospective. Like how much of a budget you need to live in the Philippines to how we built our house, to gardening and some cooking. Our channel is focused more on people who prefer to live in the countryside of the province's in the Philippines and what to expect there. Rosemarie and I live in the mountains outside of the small town of Almeria Biliran we are not city type people, we enjoy to simply type lifestyle and are down to earth people. See how I repurposed a chicken coop we weren't using for years into a hobby workshop for woodworking and meat processing. Join me as I venture into the unknown of making cured smoked bacon, ham and sausages. I'm excited to learn how to make smoked bacon, ham and sausage because you cannot buy cured smoked meats here in the Philippines. I'm hoping some of our CZcams family can give me some insight of how to do this process. At the very least we can learn and have fun trying to make it happen because lord knows I so miss good meat here in the Philippines. So, I hope you will join me on my triumphs or failures on this little mission I set out on. I've always gone by the moto of it's better to have tried something and failed, than to have tried nothing and succeeded. Yes they do. Nice thing is beer goes well while your smoking them as well.
Right on man. Make it yourself. I hear expats complain about not being able to find good pickles. One guy paid $182 to have a big jar of Vlasic pickles shipped to him in PH. Making pickles is pretty easy and $182 will make a lot of pickles.
I once made a smoker/slow cooker out of metal studs and corrugated metal. I could get 5 pork butts in there, couple chickens and some ribs.
Grates work. The only reason for hanging meat/sausage is because smoke houses are normally tall so they can hang a lot of links. Just quicker to load and unload.
I believe the pickle thing. I looked into getting summer sausages over here and believe it or not it was over a hundred bucks a pound.

Thanks I enjoy them a little less chilli powder next time though they do have a bit of a bite to them, but still delicious.

Thanks, yes it's the only place you can get aged, cured and smoked meats in Biliran. I've heard there's another guy doing it somewhere but like me only for his own consumption not for sale.

Have fun, they are delicious especially since you can't buy any smoked meats here so I was very happy. Next batch I will change the recipe a little though.

You should have been cooking at 150° and just smoke no heat or flame
That thermometer is at the top and heat rises the temperature lower down was probably 150-175 . Last time I checked you can't get smoke without fire and from what I learned smoking hams you do not want the heavy smoke that comes from when the charcoal is trying to catch on fire. Just want a steady soft flow of smoke as you slowly burn the fuel.
@@AmericaManFilipinoWife You're right you got the idea you just need to tone it down a little bit Wait until you're cold are just red and try to keep 150° add a few pieces of wood here and there for smoke not many or even sprinkle sawdust not much just enough to get some smoke
Try hanging the sausage before the fire is started
Hanging didn't work anyways as you saw. On the grate worked fine.
get some s hooks, and see if they have wood pellets for smoking it easier to control your temperture
I have some I was trying to get more in the smoker but they were to long to hang two high. Wood pellets are hard to get and very expensive in the Philippines. Coconut shell charcoal works pretty good and Lord knows there's no shortage of them here. Thanks for watching.
Fire was a little hot if you want my opinion... Probably not but you got it anyway😂
Sometimes it was but Hay it's a cheap little smoker so you can only control the fire so much. I smoked them to a ready to eat internal temperature next time I will smoke them to be ready to cook. I'm learning.
@@AmericaManFilipinoWife Randy just telling me I'm full of shit and don't know what I'm talking about 😂 I have a electric smoker it's so nice and easy set it and forget it Make sure there's water pan in there and some wood chips or sawdust in the pan next to the heating element it just smokes I run mine at 225 when I'm doing ribs or about 3 or 4 hours... They come out like an accordion and almost fall off the bone... I like my meat done I have to gum it I hate wearing my dentures 😂
Did you put garlic in it, Randy? Did you use real intestine casing or did you buy the fake ones at the store?
Yes I did put garlic in them. No that was the natural casings from the pig that I prepared. That's quite the task preparing them for stuffing. But it's worth it I like the snap as your eating them.
You need to build a smoke house and one of those pigs in there
Maybe in the future but I'm doing it small scale so don't want to have over kill on it.
