CONKIE GUYANESE STYLE/MOTHER'S DAY

  • Ingredients:
    Banana Leaves for wrapping
    1 lb. Pumpkin
    1 cup cornmeal
    1/2 coconut
    1 cup margarine
    1 1/2 cups sugar
    1 tsp. nutmeg
    1 tsp. vanilla essence
    black pepper to taste
    Water to boil Conkie
    Instructions:
    1. Clean and wash the banana leaves and the pumpkin.
    2. Grate the coconut and pumpkin, and add all the other ingredients and mix well.
    3. Wipe the banana leaves clean, rub a little oil on it and heat them to make them pliable (Soft). Cut them into 8 x 8 inch squares, and wrap around lumps of filling, tying the bundles with the twine.
    4. Place in boiling water and boil wrap conkie for about 20 - 30 minutes.
    Note: If banana leaves are not available, mixture may be steamed in a greased bowl instead.

    We make something like this in Ja. We call it tie a leaf, blue drawers or duckonoo. We just use cornmeal coconut milk spices n raisins. Good job!

    Hi Sparkle you have very strong arms to cut the pumpkin and do the grating.i think the one in the bowl should have to steam a little more .Keep the good work the old people taught you,the millennium children don’t want to mess their hands and break there 1and 1/2”nails so let’s not loose our good food.

    you can also chip your pumpkin up and use them in a food processor but thumbs up to you every time I use a hand greater my fingers always get grated so the grater is not my friend

    I guest that's your way, that's fine. you guys don't use sweet potato? in Barbados we use sweet potatoes and raisins along with the other ingredient's you use, but no black pepper.
