How to make Nigerian Cheese!!

  • How to make Nigerian cheese - called Wara - which is similar to soft cheese or Tofu, but cooked in the rural country of Nigeria.

    BattaBox heads out of Lagos, via car on the back of an okada, to a rural Fulani farm where the local Nigerian cheese is prepared.
    The Fulani pastoralist and his family milk the cows and then take the fresh milk to the hut. Men milk the cow and women take it home for production. And if the pasture is green, the cow will produce more milk.
    Inside the hut, the milk is then produced in plastic buckets, crushed bom-bom leaves are then rinsed in the milk to give it a flavour. The milk and bom-bom leaf is then boiled, maybe adding a small amount of salt. After 10 minutes, the milk has curdled into Nigerian cheese, drained, and eaten.
    "It tastes nice, it doesn't really taste of anything, but it's fresh," says Odunayo as she eats some of the newly cooked Nigerian cheese.
    Nigerian soft cheese - or Wara - can be served straight and eaten by itself, or have fried and eat with Amala. It's very nutritious and should ideally be eaten as soon as possible after it's cooked. The soft cheese is similar to Tofu, and called Wara because of the town in Kwara state where it originates from.

    You can tell there was a weird tension between these two women. Once you enter her home don't make her feel uncomfortable. Don't ask what the milk taste like if you're not willing to try it. It was almost as if the reporter was looking down on this woman and you could tell the woman felt that.

      LocsLuv 90 - Why do people confuse the language? Wàrà is milk 🥛 wàràkaṣi is the stretched-curd cheese product in the family of paneer and mozzarella. Africans will soon forget their language trying to be bourgie. And the host is crass by trying to flex showing how wide spread Yorùbá is that the Fulani woman had to learn it but that she (i.e. the host) does not have to learn Fulani. That is not great ethnic/tribal relations. It is supremacy and rude.

    The Fulani woman is very pretty. Sometimes on these videos I don't know if the presenters really take into account these villagers are human beings and they may not want to be filmed it may be uncomfortable for them. I can sense this young woman really wasn't feeling the constant questioning.

    From what I know, there are variants of Wars based on geographic region. Wars can be made from dairy milk or soybean. It can be soaked with akamu water or millet water. Various condiments can be added, from onions to just salt n pepper. Finally it can be fried or eaten fresh. Therefore Wars can come in different flavors and colors.

    This cheese is just delicious. We call it wagashi in Benin Republic. You fried it and you can put it in different kind of stew such as tomatoes or egusi soup. Miam !

    I didn't even have to think much before saying 'wara' when I read the title despite the fact that I haven't eaten it in YEARS and I also don't remember even ever being actually told that it's cheese lol. When you know you just know, home sweet home❤🥺

      If it doesn’t have taste you can zhoosh it up.
      First you place weights on top of it to press out as much whey (i.e. ọmọ-wàrà). Then it will be like a block that you can cut into pieces. Make a wet batter of flour, seasonings of choice, egg and some starch. Dip the cube wàràkaṣi inside then fry until golden brown. You’ll thank me later.

    It is also known as cottage cheese, the milk expressed from the cow, has to be pasteurized or homogenized before consumption as the uncooked one contains microorganisms that may be harmful to the health.

    Odunayo, Please don't eat uncooked soft cheese if you are indeed pregnant (as suggested by previous posts). There is an associated risk of Listeria infection. Cooked is fine however.

      Serpent Serpent Thanks. I use magnesium Chloride. Since I discovered this coagulant I have been enjoying ‘wara’ or white cheese in the comfort of my home in the UK. Same taste and you only need a small teaspoon for a litre of whole fresh milk. Now it’s only the fat I am afraid of. Very tasty when I want to give myself a treat.

      If any dairy products makes your stomach upset it means you're lactose intolerant. You can't digest lactose, the sugar found in milk. Hence why you don't have a problem with almonds and soy milk. Honestly I prefer plant based milk but I love wara 😂😂

    Impressive video. But, I have many questions. Given the Fulani herdsmen crisis in Nigeria, does this video hurt or help? Are these nomadic herdmen, or sedentary ones? Are we seeking mutual understanding or are we trying to sweep it under the carpet? Also, I am very curious how you guys made arrangements for the video? Finallly, how come the Fulani farmer speaks Yoruba so well? (PS: I don't believe you mentioned the state or the name of the village.)

      The Fulani are a nomadic ethnic group that have settled in different parts of Africa. Chances are he speaks Yoruba well because his family settled in a state where the population is predominately Yoruba.
      Also, there are other ethnic groups that rear cattle (like the Hausas).

    Why do people confuse the language? Wàrà is milk 🥛 wàràkaṣi is the stretched-curd cheese product in the family of paneer and mozzarella. Africans will soon forget their language trying to be bourgie. And the host is crass by trying to flex showing how wide spread Yorùbá is that the Fulani woman had to learn it but that she (i.e. the host) does not have to learn Fulani. That is not great ethnic/tribal relations. It is supremacy and rude.

      Maybe because the interview is been conducted in Yoruba land. As they say, when you're in Rome, do like the Romans. When you're in France, better to learn how to speak French, And better to learn english when you reside in England. I think that should be logical obvious.

      @@mungopark1876 What the fuck are you talking about? Wàrà is Yorùbá for milk; wàràkaṣi on the other hand is the accurate Yorùbá name for the curdled milk cheese (paneer) made from the leaf known as bomubómú (i.e. Calotropis procera). So when she is in Yorubaland she should speak correctly.
