- Homemade Sarawak Laksa Paste 自制砂拉越叻沙:
140g / 8-9tbsp shallots 红葱
25g / 2-3tbsp garlic 蒜
80g / 5-6tbsp galangal 南姜
110g / 7-8tbsp lemongrass 香茅
80g / 4-5pcs spur chillies 美人椒(big red chillies / 大辣椒 - less spicy 微辣)
60g / 3-5pcs dried Guajillo chillies 大辣椒干 (less spicy / 微辣)
60g 4-5pcs dried red chillies 辣椒干(spicy / 辣)
*soak dried chillies for at least 1hr 辣椒干浸泡1小时以上

The following ingredients need to be slightly roasted and crushed.
以下的成份需先稍微烤过然后再搅碎:
15g / 1-2tbsp Sarawak white pepper corn 砂拉越胡椒粒
20g / 8pcs candle nuts 角立只
50g / 3-4tbsp sesame seeds 芝麻
80g / 5-6tbsp peanuts 花生
10g / 1tsp cumin seeds 小茴香
30g / 2tbsp coriander seeds 芫荽仔
1-2 small star anise 八角
3pcs cloves 丁香
5pcs cardamons skin 小豆蔻皮
1pcs nutmeg 豆蔻
1 bowl 碗 cooking oil 食油 (for blending all the ingredients 用来混合所有成分)
1 bowl 碗 cooking oil 食油 (for sauté /用来拌炒)
2-3tbsp dark sweet soy sauce 黑甜酱
1/2 bowl tamarind juice 罗望子汁
1-2tbsp salt 盐
2-3 dark sweet soy sauce 黑甜酱油
1/2 tbsp sugar 糖
1/2 bowl water 水
*the above ingredients can made approximately 1kg of laksa 以上的成分大概可以做出1kg的叻沙酱
Laksa broth 叻沙汤:
1-1.5L chicken stock 鸡高汤
1kg laksa paste 叻沙酱
1 bowl 碗 prawn shell 虾壳
500ml coconut milk 椰浆
1 tbsp salt 盐
2-3tbsp dark sweet soy sauce
1/2tbsp sugar 糖
Laksa & condiments 叻沙与配料
4 bowl 碗 rice vermicelli (Mee hoon) 米粉
1pcs chicken breast 鸡胸肉
1pcs egg 蛋
14-16pcs prawn 虾
1 bowl 碗 bean sprout 豆芽

I have not tried that before. Perhaps you can try it out with 1/2 tsp. Let me know the result then 😊
I am allergic to shrimp (prawn). Can I replace prawn with fish and get the same taste?
You can replace with fish or chicken but the taste will be slightly different. Happy cooking 😊
I tried the recipe but my paste couldnt get the dark colour like yours. . By the way how long can the paste last if i keep in fridge
The paste have to tambah kicap hitam abit to get the color ya. Medium slow fire to tumis. 😊
@@ahchanskitchen282 roughly how long to tumis it because my paste not dry like yours or its okay if thick but dry like yours. I put some kicap hitam. But afraid putting the dark soy sauce will cause some bitter taste.
@@tsubaki115 depends on how much ingredients you cook. Mine is about 45 minutes to 1 hour. Have to keep stirring ya.

结冰可以放上大概六个月。放冰箱冷藏可以放一到两个月左右。
